Easy Greek Apple Cake

Hey there,

The mornings here have finally started to cool down, so I went straight to the kitchen and preheated the oven.  And what did I do???  I made this Easy Greek Apple Cake.  Apple season has started, so it’s that time of year to start baking with apples!!

I was at the market the other day searching for apples, you know, the “proper baking apples” everyone talks about. Well… naturally, I couldn’t find any.  So I did what every Greek mom, auntie, and yiayia has done since forever: I grabbed whatever looked good. A few Granny Smiths, a few red apples, and off I went. Honestly, I don’t remember my mom ever saying, “Oh, I need specific baking apples.” She baked with whatever apples were in the house, and the cakes always turned out amazing.

I peeled and sliced the apples and squeezed a little lemon juice on them so they wouldn’t turn brown.  Once the batter came together, thick and golden, I folded in the apple pieces and poured everything into the pan. The moment the cake went into the oven, the whole house changed. The smell of cinnamon, warm apples, and caramelizing sugar drifted through every room. Even the dogs wandered into the kitchen. 🙂

When I finally sliced into the cake, the crumb was soft and moist, dotted with tender apple chunks that had melted just enough to become silky. (ohhh wait one minute, there is a splash of brandy in the cake! 🙂 You can enjoy a slice of this cake anytime: with your morning coffee, as an afternoon treat, or even late at night when you want something sweet.  This Greek Apple Cake has the warmth of cinnamon, the softness of baked apples, and doesn’t need anything more. 🙂

Easy Greek Apple Cake

This Greek Apple Cake is one of those simple, comforting bakes that fill the whole kitchen with warmth. Fresh apples, cinnamon, and brandy come together to create a soft, moist crumb cake,.

Ingredients
  

  • 5 apples 3 Granny smith and 2 red apples peeled and sliced
  • 2 cups self-rising flour
  • 2 tsp baking powder
  • 1 cup unsalted butter room temperature
  • 1 ½ cups light brown sugar
  • 2 eggs large
  • ¼ cup brandy optional
  • ½ cup milk
  • 2 tbsp cinnamon powder

Instructions
 

  • Add the 1 cup unsalted butter , and 1 ½ cups light brown sugar to a mixing bowl and beat until fluffy.
  • Preheat the oven to 180℃. Combine the 2 cups self-rising flour and the 2 tsp baking powder then sift together.
  • Add the 2 eggs to the flour mixture one at a time. Then pour in the ¼ cup brandy, ½ cup milk, and continue to beat.
  • Add the 5 apples and the 2 tbsp cinnamon powder and use a spatula to combine.
  • Fold the batter into the baking pan and bake for 40 minutes or until golden brown.
  • Set the cake aside to cool and then slice and serve.

  1. I’m a Grannie Smith fan! Good to know you can use any apples and I never thought of juicing them to prevent browning. Is brandy part of the family recipe or yours? 😉 I think I’d have to add bourbon.

    • Hi Caz, my mom used to add brandy sometimes to this cake, once in a while. This when my parents were hosting a dinner party back in the day and were expecting guests on a Saturday night. :). I hope you and your mom are doing ok….huge hugsss
