Hello there,
(Updated recipe)
How was your weekend? I hope you all had a lovely one! Mine started with a little thought that popped into my head on Saturday morning: Easy Apple Bundt Cake. This isn’t your usual heavy apple cake. I wanted something a little lighter, moist, and full of lovely apple pieces. So, I decided to experiment a bit in the kitchen. You know me by now, foodie friends. Sometimes I follow a recipe, and sometimes I look at the ingredients and think, Hmm, what happens if I do this instead? It’s all part of the fun, although occasionally my experiments have other plans!
The ingredients are very similar to those used in a basic cake, but I made a couple of small changes. First, I used vegetable oil instead of butter. This helps give the cake a lighter texture while keeping it wonderfully moist. And the apples? Well, this time I didn’t slice them into thin pieces. Instead, I cut them into little cubes. Why? Because I wanted a bit of apple in every bite! There is nothing more disappointing than taking a bite of apple cake and wondering where all the apples have gone. It’s an apple cake, after all, not a game of hide-and-seek!
I also sprinkled brown sugar over the apple pieces before adding them to the batter. Brown sugar gives them a lovely sweetness, while I used fine granulated sugar for the rest of the cake mixture. Little details can make a difference, and I enjoy playing around with these small changes. Now, here comes the interesting part. I decided to use self-rising flour. Why? Because sometimes I like to make life a little easier in the kitchen. Who doesn’t? I had tried using self-rising flour in another cake in the past, and let’s just say the result wasn’t exactly something I wanted to frame and hang on the wall. But we learn from our kitchen adventures, don’t we?
This time, I wanted to see whether it would work better in my apple cake. I was curious to see how the batter would turn out and whether the cake would rise nicely. Thankfully, this experiment was much more promising! I preheated my oven to 180°C and kept the temperature nice and low. The cake took just under an hour to bake. I chose the lower temperature because I wanted a moist cake, with the apple chunks having enough time to soften as the cake baked. Of course, every oven has its own personality. Some behave beautifully, while others seem to wake up in a bad mood! So, keep an eye on your cake and check it with a toothpick before taking it out of the oven.
Once it was ready, I let it cool before giving it a generous dusting of powdered sugar. The diced apples add little pockets of sweetness throughout the cake, while the vegetable oil helps keep the texture soft and moist.
So, foodie friends, if you have a few apples waiting patiently in your kitchen bowl, give this Easy Apple Bundt Cake a try. Maybe you would also like to try out this apple cake recipe 🙂 https://foodzesty.com/apple-cinnamon-cake-recipe/
