The weather has been let us just say insane! We had hail, rain, snow, and a few days of warm weather. Now we are back to cold weather and wearing our winter coats. While I was looking out the window and watching the snow fall, I thought why not make a cake? I had apples in my fruit bowl and cinnamon powder, so I made this Apple Cinnamon cake. Cinnamon powder and sticks are always in my pantry. (a must)
This cake is made from scratch with organic apples so you can taste the sweetness in each bite. I know apples are not in season, but I like having a few in my fruit bowl. The first thing I did to the apples was to boil them to soften them up because they had tough skin but were sweet. I boil the apples for about 7 to 10 minutes on low heat. Once the apples have softened I set them aside to cool off and then cut them into small cubes. This way the apples are already tender before baking. This step is quite helpful when you have hard/firm apples.
There are so many versions of apple cakes, and apple cinnamon cakes out there that you can try. But what makes this Apple Cinnamon cake special besides the tender apples well I’ve added Greek yogurt. Yes, that is correct greek yogurt makes this cake ever so moist and even tastier. I bet you didn’t expect that, did you? The Greek yogurt gives this cake a tangy taste, but if you prefer you can leave the yogurt out. This dessert cake turns out moist, soft, and fluffy.
I’m a firm believer that not everything needs to be in season to enjoy eating. Even though apples are not in season you can still find tasty, organic apples.

Apple Cinnamon Cake Recipe
Ingredients
- 4 cups self-rising flour
- 4 eggs
- 1 tsp baking powder
- 1 cup sugar
- 1½ cups apples peeled and cubed
- 1 cup Greek yogurt
- ¾ cup butter at room temperature
- 1½ tsp cinnamon powder
- powder sugar (optional)
- extra flour
- extra butter
Instructions
- Preheat oven to 180c/350f
- Shift the flour and add the baking powder.
- Beat butter and sugar until fluffy. Add one egg at a time to the batter.
- Slowly start to add the combined flour and baking powder. Beat on low for a few seconds. Remove the bowl from the mixer and transfer to a second bowl. Fold in the Greek yogurt, the cubed apples, and cinnamon powder.
- Use a spatula to combine the ingredients.
- Fold the batter into a medium size round cake pan.
- Use the extra butter to coat the cake pan until it's completely coated. Then add extra flour to the pan and use your hand to help the flour cover the surfaces around and on the bottom of the pan. Fold out the excess flour
- Fold and spread the batter evenly in the baking pan.
- Bake until golden brown. Use a cake tester to see if the cake is ready. Let the cake cool on a wire rack.
- Transfer the cake to a serving platter, sprinkle it with powdered sugar, and serve.
