Beets are vegetables that you either love or hate. I’m one of those people who sometimes love them but sometimes I really don’t like them until I found this recipe. Adding cream cheese and Greek yogurt to this beetroot salad gives this salad a light taste and makes it so creamy.
I made fried Cod and this beetroot salad was a great side dish. I do know that beets have some benefits so I try to add them to my menu every other week.. This creamy salad has some tweaks, which I am sure you will want to try. I discovered this salad about two years ago while searching for beet recipes. I found this one in my mom’s cookbook but there was no cream cheese only yogurt and a little olive oil. The traditional Greek Beetroot salad consists of beets, olive oil, garlic, and vinegar, and thats it.
Online there are many Beetroot salad recipes that you can find, but cream cheese and Greek yogurt make a difference. The yogurt I used has only 5% fat, so if you go with the full-fat Greek yogurt you need to add in more cream cheese. If you think the cream cheese and Greek yogurt are not enough add more. I believe the amount that you will find in the recipe card below is more than enough for this salad.
I boiled the beetroot for about 20 minutes to cool off before cutting it into medium-cubed size. If cutting into cubes is not the way you want to go, use your food processor to dice them up. Creamy Beetroot Salad
Ingredients
- 4 beetroots medium size and boiled
- 1 cup Greek yogurt 5% fat
- 3 tbsp cream cheese
- 2 tbsp vinegar
- 3 tbsp olive oil
- dill
- salt
- pepper
- nuts to garnish
Instructions
- In a bowl combine the Greek yogurt, cream cheese, olive oil, vinegar, salt, and pepper. Give it a good stir and then add in the beetroots and dill.
- Garnish with your favorite nuts and serve with homemade fresh bread or crackers.
