Cheeeezy Italian Chicken Skillet

Hey there,

Hope everyone enjoyed their weekend! I’m back with another delicious and simple recipe to kick things off.  First up: this Cheeeezy Italian Chicken Skillet (yes, all those e’s are very intentional, it’s how I do cheese around here).  It’s my addition.

Now, although I’m a vegetarian, I spend plenty of time cooking chicken. My family loves it, and while I have zero cravings for it myself, I do enjoy the challenge of making it tasty, cozy, and most importantly, quick. And this one checks all the boxes.  Actually, I found a similar recipe in one of my old, well-loved cookbooks, you know the kind, pages stuck together and the cover barely hanging on.  I found a basic baked chicken dish and thought, “Hmm… nice, but kind of boring.” So I did what I usually do when a recipe feels a little too oh hum. I turned to the internet.  After a few scrolls (and a couple of ooh that looks good), I stumbled onto a few cheesy, tomato-y chicken skillet ideas and thought, yep, that’s the one.

I grabbed those chicken breasts and popped them into the air fryer for a quick, golden shortcut. While they’re cooking up, I’ve got my skillet ready for the next cheesy step. Now let’s talk about the cheese.  I used a mix of mozzarella and grated white cheddar; trust me, it’s a dreamy combo. That stretch, that pull, that gooey magic mozzarella does is so good!

Sometimes, I’ll use a Greek cheese that gives the same melt-and-pull vibes as mozzarella.  But unfortunately, it’s one of those situations of they don’t bring enough of this chees in my local Greek supermarket. So for this recipe, mozzarella was the best option.

So, there it is, folks, a simple and seriously delicious Cheeeezy Italian Chicken Skillet recipe that I hope you enjoy cooking and eating.  I may be Greek-American, but that doesn’t stop me from loving Italian food, especially with so many Italian friends (in Italy, no less!). How could I resist? 😄

Equipment

  • 1 air fryer
  • Oven
  • Cold Cast Iron skillet

Ingredients
  

  • 4 pieces chicken breasts cut into bites
  • 10 cherry tomatoes
  • 15 Mozzarella balls
  • Mozzarella cheese sliced into small pieces
  • red onion finely chopped
  • 3 tbsp dill fresh finely chopped
  • 3 tbsp olive oil
  • 1 ½ tbsp butter
  • salt (optional)
  • pepper white pepper
  • 4 tbsp white cheddar cheese grated

Instructions
 

  • Give the cherry tomatoes a good rinse and gently pat them dry with a paper towel. Then, chop the onion into small pieces so it melts right into the skillet and adds flavor.

  • Preheat your oven to 200℃
  • Cut the chicken breasts into small, bite-sized pieces. This helps them cook faster and makes the dish easier to serve
  • Drizzle the olive oil into your skillet and warm it over medium heat. Add the chopped onions and sauté for a few minutes, stirring occasionally, until they’re soft and just starting to turn golden. Add the cherry tomatoes and gently stir.
  • Place the chicken bites into the air fryer basket. Don’t forget to spray a little olive oil in the basket and lightly on the chicken. This helps everything cook nicely. Cook at 200℃ until the chicken is tender and starting to brown. You don’t need to cook it all the way through. The chicken will finish cooking in the oven with all that melty cheese
  • Remove the pan from the heat and set it aside. Cut small pieces of mozzarella and layer the bottom of the pan. Add the chicken once its's done in the air fryer, add the fresh dill, mozzarella balls, grated white cheddar cheese, salt, and I like to use white pepper when cooking chicken.
  • Once everything’s in the skillet, scatter a few small pieces of butter over the top. This step adds richness and helps everything get beautifully golden. Pop the skillet into the oven and bake until the cherry tomatoes are soft and tender, the chicken is golden brown, and the cheese is perfectly melted and bubbly.
  • Serve straight out of the oven.
