Give the cherry tomatoes a good rinse and gently pat them dry with a paper towel. Then, chop the onion into small pieces so it melts right into the skillet and adds flavor.
Preheat your oven to 200℃
Cut the chicken breasts into small, bite-sized pieces. This helps them cook faster and makes the dish easier to serve
Drizzle the olive oil into your skillet and warm it over medium heat. Add the chopped onions and sauté for a few minutes, stirring occasionally, until they’re soft and just starting to turn golden. Add the cherry tomatoes and gently stir.
Place the chicken bites into the air fryer basket. Don’t forget to spray a little olive oil in the basket and lightly on the chicken. This helps everything cook nicely. Cook at 200℃ until the chicken is tender and starting to brown. You don’t need to cook it all the way through. The chicken will finish cooking in the oven with all that melty cheese
Remove the pan from the heat and set it aside. Cut small pieces of mozzarella and layer the bottom of the pan. Add the chicken once its's done in the air fryer, add the fresh dill, mozzarella balls, grated white cheddar cheese, salt, and I like to use white pepper when cooking chicken.
Once everything’s in the skillet, scatter a few small pieces of butter over the top. This step adds richness and helps everything get beautifully golden. Pop the skillet into the oven and bake until the cherry tomatoes are soft and tender, the chicken is golden brown, and the cheese is perfectly melted and bubbly.
Serve straight out of the oven.
