Veggie Burger on Pita Bread

Hey there everyone,

Veggies Burgers on Pita Bread was what I was going to make for lunch.  So, I went to the farmer’s market did my Veggie shopping for my burgers.  I washed, diced, peeled, mixed, shaped into hamburgers and I placed them into the oven.  In the meantime I was preparing the Pita Breads,  brushing Olive Oil, with a pinch of salt and oregano as a topping.

Now, this is one good reason why you should be paying attention to what you are doing and not thinking of a million other things that need to be done.  So, here is what happened. while I was preparing the pita bread I smelled something burning!!! It was coming from the oven, I ran opened the oven door and there they were my brown blahhh burned hamburgers. 🙁   I was so upset. I would have taken a photo but they were thrown out by someone, so that I wouldn’t continue to look at my mess. 

The farmer’s market takes place once a week so there was no where to shop for fresh veggies.   So, I went to the deli that is close by, (which does not sell fresh produce by the way) to the house and went straight to the frozen section and picked up these ready made Veggie Burgers. I asked my mother in law to look after these just in case I burned these too..hahhahaha…They weren’t as good as mine, in the sense that mine were much more fluffier and you were able to take big bites and just taste all the yummy Vegetables.  

This actually happened a few months ago, when I started working again, and trying to get back into the working world, doing too many things at the same time something was definitely going to give and back then it was my dinner. 🙁

When I do these sort of mishaps in the kitchen, it definitely means it’s time for me to take a break from everything. So, for the next two weeks I’m off and will try to just get some rest. I am wishing everyone a wonderful vacation, and see you again in two weeks.

INGREDIENTS:

1 Aubergine (grated)

1 medium size Onion (grated)

1/4 cup Parsley (choppped)

1/2 cup Vegetable Stock

1 large Zuchinni (grated)

1 cup Bread Crumbs 

Salt

Pepper

Olive Oil

6 Pita Bread (sliced in half)

Oregano

 

PREPARATION:

Add Olive Oil into a pan and saute onion. Toss in grated vegetables and saute for 10 minutes. 

Set aside when done to cool.

Drain Veggies from excess oil.

In a large bowl add in bread crumbs, veggies, parsley, salt and vegetable stock and combine.  Add more bread crumbs if necessary.

Shape into Hamburger Patties.

Cut Pita Bread in half.

Oil brush pita bread and top with a mix of oregano and salt.  Bake  at 180 degrees, until golden brown on both sides.

These are delicious baked or grilled!!
