Good morning/afternoon/evening to all,
I hope everyone enjoyed their weekend. Vanilla, Watermelon Smoothie, I love the colors of this drink. it reminds me of Summer time. Swimming, beaches, friends, family, and light lunches, light dinners, and delicious fresh fruit.
The Farmers Markets in Athens are quite big, and filled with fresh vegetables, fruit, nuts and a whole lot more. Shopping at the market was always a fun time for me, so when I came across one the other day, I had to do a bit of shopping and that meant shopping for fruit. 🙂 I picked up a Watermelon, Peaches, and some delicious Apricots. When I got back from shopping, I just had to try out this recipe with some fresh Peaches that I bought, but I was also curious to see what the Watermelon would taste like. I added Vanilla powder into the smoothie, and I fell in love with the amazing taste. 🙂 Hands down the Watermelon Smoothie was the winner.
We have been having high temps or shall I say heatwave/heatwaves these past few days. Being outdoors is not much of an option, staying indoors with the air con to keep me and Charlie cool is. 🙂

INGREDIENTS:
4 cups Watermelon (pitted and cut into pieces and place into Freezer for 2 hours)
2 tablespoons Honey
1 1/2 tablespoons Lemon Juice
2 teaspoons Vanilla Liquid Extract/Powder
1 cup 2% Fat Greek Yogurt
PREPARATION:
Cut Watermelon into smaller pieces and place in the fridge for about 2 hours.
Place frozen Watermelon, Vanilla Extract, Honey and blend.
Add tablespoon of lemon juice, and give it a good spin.
Add the low fat Greek Yogurt and blend. Pour into a large glass and enjoy this delicious fruity smoothie
