Quick and Easy Leek & Cheese Quiche

Heyyy there,

I hope everyone is well.  I am back!! 🙂  Typing away on my laptop again, or at least trying too. Where shall I start.  I guess with the sad news first,  one of my mother in laws beautiful Maltese doggies unfortunately  passed away yesterday.  It’s been hard on everyone especially for my in laws. Her name was Sissy. RIP Sissy mou 🙁  It was a sad day, and continues to be one today. 🙁  I am not going to hide the fact that  I cried. It is so hard when you lose a pet, I know,  I lost mine just over 2 years ago…and it still hurts.  But my Charlie is here now, and he makes me smile when I am sad like I am today.

So for the past few weeks I have been in Greece, and I am planning on staying a couple of more weeks. One of the main stressful situation that I had to deal with here is setting up Wireless Internet.  I visit  Greece quite often because we still have family here, so it’s not like I don’t know what to expect.  I was prepared for the huge challenge. 🙂  I can’t tell you how many times I went back to the store and called them.   I finally got internet set up!!!   uffffff   

I haven’t had much time to cook or bake while I have been here.  But I did find some time a couple of days ago to make this delicious Leek Tart.  It should have been thicker, but I don’t have my own pots and pans here so I work with what I have on hand. 🙂  Either way thin or thick the taste was amazing, and I made it under one hour. 🙂

 

INGREDIENTS:

5 Leeks (chopped)

1 cup Milk

2 tablespoons Cooking Butter

1/2 cup All Purpose Flour

2 Eggs 

4 tablespoons of Olive Oil or Vegetable OIl

1 cup Parmesan Cheese

1/4 cup Dill

Salt

Pepper

 

PREPARATION:

Chop white and green part of Leek.  (Wash throughly)

In a medium size sauce pan add Olive Oil, Leek and Dill.  Sauté and set aside to cool.

In a smaller sauce pan add in the butter, and melt.

Continue by adding in the flour.  

Stir Bechamel Sauce on medium heat.  Set aside for to cool for 15 minutes.

Add the eggs into the Bechamel along with 1/4 cup of the Parmesan Cheese.

Add the rest of the ingredients, except for the cheese.

Combine Sauce with Leek mixture.

Take a small baking pan and add in the mixture.  Top with the rest of the Parmesan Cheese.

Pre – heat oven at 180 degrees, and bake for 20 minutes.  Eat warm!!  (but I ate it cold and I loved it)  🙂

  1. Oh no, I’m sorry about your mother-in-law’s dog, that’s so sad. Poor Sissy 🌷 The loss of a loved furbaby is painful. Snuggle with Charlie, and try to enjoy your time in Greece. Well done on succeeding with the wi-fi, too – it’s incredible how now we can’t live without the internet!
    Another interesting recipe, and I have to shamefully admit I’ve never even tried quiche!
