Cold Spinach Artichoke Dip Recipe

Hey everyone,

Superbowl weekend is coming up so why not try out this no-mess super easy healthy cold dip.  🙂  This recipe was posted in August of 2020.  🙂

We are having a heatwave and It seems that this will continue for at least 10 more days. But this is what summer is all about right? hot days, beach, BBQ, and well you get the idea.  I remember my childhood summers in NY, gosh it was hot, sticky and so much fun.  Summers in NY meant standing in front of a fire hydrant getting drenched in water, and watch re-runs.

Baking and cooking was definitely something I was not planning on doing today.  A cold dip and cheese platter with some cold cuts, olives, crackers, toasted bread was the menu of the day.  Artichokes are so difficult to find here. I usually bring back Artichokes from Greece, actually I bring back a lot of things from Greece.  So, you can imagine how shocked I was when I found canned Artichokes in the supermarket. (I grabbed that can so fast hehehehe)  It’s one of those things that when you see it buy because you might never see it again.

After work, I sat in front of the TV and watched reruns of  I Love Lucy.  🙂  The episode I watched today was “The Pioneer Woman”.   It starts off with Lucy at the sink washing dishes and singing.  Personally, I don’t know anyone who sings while washing 30 or 40 plates, bowls, cups, etc.  Anyway, she decided at one point to add up how many dishes she has washed in the 10 years that she has been married.  She came up with 290,000 dishes…I started to think if I were to add up the 30 years that I have been married and washing dishes how many dishes would that come out toooo??

Cold Spinach Artichoke Dip Recipe

A deliciously simple and healthy dip made with vegetables, herbs and greek yogurt. Serve cold with toasted bread garn
Prep Time 10 minutes
Course Dip
Cuisine Mediterranean
Servings 6

Ingredients
  

  • 3 cups fresh spinach
  • 6 artichokes can or jar
  • 2 scallions
  • parsley optional
  • 1 ⅓ cups greek yogurt 5% fat
  • salt
  • pepper
  • lemon zest

Instructions
 

  • add all the ingredients into a blender or a food processor. beat at high speed for 5 minutes
  • serve cold with toasted bread or crackers.

      • Yeah, I'm ok, and it's so nice of you to ask.. It's just getting long and I'm preparing for longer. Today I went to vote and there were so many people not wearing masks I felt I had to leave for my safety...usually the primary has low turn out and we have a mask mandate. I've ordered a ballot for the national race! How are things there?
      • Hi Mollie, things are much better here in Europe. Good that you left. My friends and family in the states are aggravated with the fact that most people refuse to wear masks. What is up with that!!!?
  2. A very healthy dip! Sounds hooooot over there. We've had a heatwave in the grey ol' UK too, which came as a shock for us all I think! I Love Lucy, I've not seen that in ages. It wasn't as big in the UK as it was in the US and elsewhere, but I used to watch odd episodes. What sort of stuff did you watch reruns of when you were a kid? I used to like a lot of US shows like Sister Sister (bloody loved that!) and when I was very little just lots and lots of cartoons. Oh the good old days..! Stay cool if you can lovely xxxx
    • Heyyy Caz...It is stillll sooo hotttt wayy to hot for NL...Ok so my favorite was I dream of jeannie...bewitched, brady bunch and the flying nun...these were definitely reruns I would watch...I was definitely a Scooby Doo Fan and still am hahahhahhaha

  6. Do we need to prepare the artichokes in a particular way or just buy the and thro them in?
    • Hi there, If you are able to find canned artichokes just drain and pop them into your blender. :) Thank you for popping in :)
