Single Serve Cocoa Muffins

Hello everyone,

Do you ever have those moments when you’re unsure of what you want to serve as a dessert?  I’ve had a few myself and as many dessert recipes as I may know or recipes that I can find in cookbooks for some reason, I always go back to these special Single Serve Mini Cocoa Muffins.  Of course, I’m not suggesting that you don’t make any of your traditional cakes or cookies, but you sometimes want something different.  I believe for the holidays these Mini Cocoa Muffins are the best option.  You may disagree with me but sometimes you need to think outside the box and come up with an idea that many will not expect.

I wanted to keep these mini muffins simple, I didn’t garnish them with sprinkles or frosting, just simple cocoa muffins that everyone would enjoy.  I prepared the mini cocoa muffins a few days ahead of time and froze for a few days.  While preparing the cocoa muffins I made a few Vanilla muffins or me.  I separated a small portion of the batter and added a few shots of Rum.  Yep, I thought the rum would be a lovely treat. I used two separate bowls one to combine the dry ingredients and the other for the wet ingredients but if one works for you then use one bowl.

You might be asking yourself what is a single-serve?  It’s a small portion recipe made much quicker than the regular recipe.   I will be baking a Christmas cake this year and I already have a recipe in mind.  I will also be baking Greek single-serve desserts Melomakarona or Kourambiedes.  Kourambiedes and Melomakarona are Greek Christmas Cookies, which I love to prepare in bite-size rather than the normal larger size.  Bite or mini don’t they all taste delicious!  For those of you who may not know what Kourambiedes are they are traditional Christmas butter almond cookies.  Melomakarona are also Greek Christmas cookies but made with Honey cookies.

So, if you are unsure of what to serve as your Thanksgiving dessert. Try giving these Single Serve Cocoa Muffins a go, who knows maybe your guest will absolutely love them!  Oops!! forgot to mention these muffins are eggless. :).  Plus, I made two batches of six muffins with this recipe and the most important ingredient don’t forget to add the chocolate chips at the end.

Single Serve Cocoa Muffins

Mini Cocoa muffins with a splash a rum is a great idea for the holidays.

Ingredients
  

  • 4 tbsp cocoa powder sift
  • tsp baking powder
  • cups all purpose flour sift
  • 1 cup dark brown soft sugar
  • 1 tbsp vanilla extract
  • ¾ cup orange juice
  • zest from one orange
  • 1 tsp baking soda
  • 1 tbsp white vinegar
  • 40 ml rum optional
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 180C. Line your muffin pan with mini muffin paper and set aside. Add all the dry ingredients in one bowl, cocoa powder, baking powder, and all-purpose flour, and combine using a spoon or fork. Use a zester for the orange, and squeeze the orange. Add the baking soda to the juice and give it a few good stirs.

  • In the second bowl combine all the wet ingredients plus the sugar and vanilla extract. Add the wet ingredients to the dry and use a spatula to mix the ingredients.

  • Add the chocolate chips to the batter and mix. Transfer a small scoop of mixture to each muffin paper and bake for 25 minutes or until golden brown.
