Single Serve Cocoa Muffins

Mini Cocoa muffins with a splash a rum is a great idea for the holidays.

Ingredients
  

  • 4 tbsp cocoa powder sift
  • tsp baking powder
  • cups all purpose flour sift
  • 1 cup dark brown soft sugar
  • 1 tbsp vanilla extract
  • ¾ cup orange juice
  • zest from one orange
  • 1 tsp baking soda
  • 1 tbsp white vinegar
  • 40 ml rum optional
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 180C. Line your muffin pan with mini muffin paper and set aside. Add all the dry ingredients in one bowl, cocoa powder, baking powder, and all-purpose flour, and combine using a spoon or fork. Use a zester for the orange, and squeeze the orange. Add the baking soda to the juice and give it a few good stirs.

  • In the second bowl combine all the wet ingredients plus the sugar and vanilla extract. Add the wet ingredients to the dry and use a spatula to mix the ingredients.

  • Add the chocolate chips to the batter and mix. Transfer a small scoop of mixture to each muffin paper and bake for 25 minutes or until golden brown.
