Single Serve Cocoa Muffins

Mini Cocoa muffins with a splash a rum is a great idea for the holidays.

- 4 tbsp cocoa powder sift
- 1½ tsp baking powder
- 1½ cups all purpose flour sift
- 1 cup dark brown soft sugar
- 1 tbsp vanilla extract
- ¾ cup orange juice
- zest from one orange
- 1 tsp baking soda
- 1 tbsp white vinegar
- 40 ml rum optional
- ½ cup vegetable oil
- 1 cup chocolate chips
Preheat oven to 180C. Line your muffin pan with mini muffin paper and set aside. Add all the dry ingredients in one bowl, cocoa powder, baking powder, and all-purpose flour, and combine using a spoon or fork. Use a zester for the orange, and squeeze the orange. Add the baking soda to the juice and give it a few good stirs.
In the second bowl combine all the wet ingredients plus the sugar and vanilla extract. Add the wet ingredients to the dry and use a spatula to mix the ingredients.
Add the chocolate chips to the batter and mix. Transfer a small scoop of mixture to each muffin paper and bake for 25 minutes or until golden brown.
