Salmon with Light Cream Cheese

Hello, my foodie friends,

I stopped by the fish market the other day for some fresh salmon. It was pretty quiet, which didn’t surprise me, most people are still off enjoying their spring vacations. Do you like fresh salmon? Because I sure do! And if I’ve got your attention, get ready for a delicious Greek twist: fresh Salmon with Light Cream Cheese sauce.

I gave the salmon a simple seasoning  a sprinkle of salt, black pepper, and a drizzle of avocado oil. Then, I pan-seared the salmon with avocado oil until it was flaky and slightly cooked. I placed a sheet of parchment paper into my air fryer and put my salmon in, and cooked it for another 10 minutes. The reason I finish cooking the salmon in the air fryer is to lock in all those juices and give it a touch of crispness on the outside without drying it out.   Now, if you prefer, you can continue pan-searing the salmon until it’s fully cooked.

For the sauce, I chopped up a few fresh spring onions and finely chopped some dill. Some people like to toss in extra greens like zucchini for more texture.  I wanted a little smoother texture, so I kept it to just three ingredients.  Too many ingredients would have made the sauce feel heavy and clunky, but keeping it simple gave it that soft, smooth, and creamy texture that I was aiming for.  I’ve tried all sorts of variations of this sauce, but this simple version truly makes me happy. 🙂

It’s been quite warm and sunny these past few days, and I am loving the sunshine, and so are my puppies.  I can let them out in the garden to play and enjoy the sunshine. I’m curious, do any of you have pets? If you do, what kind are they?

Salmon with Light Cream Cheese

A delicious sauce made with light cream cheese, dill, and chopped fresh spring onions.

Ingredients
  

  • 2 fresh salmon fillet
  • 3 fresh spring onions chopped
  • 3 tbsp avocado oil
  • 4 tbsp cream cheese light
  • salt
  • pepper
  • 1 lemon zest
  • 4 tbsp water

Instructions
 

  • In a sauté pan, heat the avocado oil. Add the salmon after seasoning it with salt and pepper.
  • Sear the salmon for a few minutes on each side.
  • Then transfer the salmon to the air fryer and place it on a piece of parchment paper, and bake in the oven at 200°C for 10 minutes.
  • Use the same pan, add the chopped onions along with the finely chopped dill.
  • Season with salt and pepper.
  • Sauté and while stirring, add in the cream cheese and two tablespoons of water to break down the cream cheese.
  • If the cream cheese has softened and melted, then there is no need to add the extra two tablespoons of water.
  • Season a bit more with pepper.
  • Remove the salmon from the air fryer and place it on a serving plate. Spoon the light cream cheese sauce over the top to garnish.
  • If you love dill garnish with a bit more fresh dill.
