I have not been cooking these past few days, just preparing salads, because who could possibly cook in this heat. I had some greens in my fridge. Went to work on preparing my Salmon salad. 🙂 But it’s not the salad that I am aiming for you to try but the vinegar-based salad dressing. This salad dressing was made with honey and balsamic vinegar. I usually add mustard but I was out and I definitely was not going to the supermarket just for mustard. (It was just as good without the mustard) I used honey but I also added a honey-based balsamic vinegar so that the taste is a bit more intense. Now, if you are the kind of person who loves eating hot and spicy in hot weather then go spicy. Add a tablespoon of spicy Dijon Mustard or any type of spicy mustard of your choice and garnish your salads. 🙂
How is everyone’s week going so far? Doing or planning anything exciting for the weekend? ok, well if you live in Europe you know that this heatwave has been going on for more than a week. The temps are still quite high during the evening so sleeping has been a struggle for most of us. Poor Charlie I keep wetting his head to cool off but even he is having a difficult time trying to find a cool place in the house.
I am actually going to try to find a place to cool off and enjoy my salad!!

Salmon Lettuce Salad with Honey Balsamic Dressing
Ingredients
- ½ cup Olive oil
- 4 tsps Honey
- 3 tbsp Balsamic Vinegar
- Salt
- Pepper
- 3 tbsp Mustard optional
Instructions
- Combine all ingredients in a bowl. Serve cold

Love me some vinegar based dressings! Been making my own for a few months now, and don’t know why it took me so long to start! Even made a homemade ranch. The ranch powder I made also got used for dip, some roasted potatoes, even some grilled chicken. Homemade dressing tastes soooooooooooo much better than the bottle stuff. Thanks for another great recipe Sophie. I hope you found a cool spot to enjoy your lovely creation.
Ohhh me tooooo but if you haven’t tried honey balsamic yet definitely go for it…it has a delicious sweet and sour taste ohhhhh sooo gooddd!! Thank you for always leaving such wonderful and kinds comments. And the ones that make me laugh so loud 🙂
