Chocolate Chip Cupcake / Muffin Party

Hello 🙂

Catching up with friends who live around the world has been difficult these past few months.  So, I sent out a message last week and mentioned to them that we should have a Virtual Coffee/Cupcake Party.  They loved the idea!!  We all prepared different cupcakes, and or muffins brought our Java chatted on Skype for about 1 hour. It was fun!!   

I decided on making muffins, rather than cupcakes. The frosting part is difficult for me. I just can’t seem to manage to squeeze the frosting out of the plastic bag.  I have bought all types of bags and nozzles and well I am useless when it comes to frosting. Hubby asked if I could add some chocolate chips in them which I did.  I also made a small batch of Vanilla muffins for me.  When I say small I mean 4. 🙂  I ate two cupcakes while chatting and two this morning while working.    Here’s a question for ya, do you think that Muffins can be eaten all year round orrrr are they just for those cozy winter months?   

Ever since the beginning of the month I have been feeling restless, I guess it’s the Aries in me. I want to go see my mom, my friends, dip into those beautiful turquoise waters in Greece and just get away from everything for a while.  Is anyone else feeling like I am?  Would love to know if you are planning on going on vacation or vacationing at home.

Chocolate Chip - Muffin Party

A traditional muffin recipe with a few extra splashes of Vanilla extract and Chocolate Chip bites.
Prep Time 10 minutes
Cook Time 28 minutes
Course Dessert
Cuisine American

Ingredients
  

  • 3 cups all-purpose flour
  • ¾ cup soya milk
  • ½ cup sugar
  • 2 tsp baking powder
  • ¾ cup melted butter room temp
  • 2 tbsp vanilla extract
  • ¾ cup chocolate chips
  • 2 eggs
  • salt pinch

Instructions
 

  • In a medium bowl add and mix all dry ingredients.
  • In a second bowl all the remaining ingredients mix. Add egg batter into dry ingredients and combine together.
  • Add a large scoop of batter into each paper cup. Bake at 180 until golden brown

  1. Muffins are for any and all seasons!!😋 I feel you about the restlessness and missing places and people. My family is quite scattered around the world, but we usually catch up in summer when everybody gets back to Estonia for a while. This year we won’t be leaving France though and I miss all my childhood places that I would love to get to with my own kids now.. The cupcake party is a wonderful idea. I should have one with my sister and cousins as well🥰🧁🥰
    • I am glad you liked the idea...It was a lot of fun. Since, you are not going back home maybe this cupcake party is definitely could be a great idea and so much fun. I added a few balloons into it but Charlie my dog broke most of them before I could get anyone to see them on skype. hahhah I know how difficult it is not going back home..:( but try to think positive and lets hope that this ends quickly...Sending you hugs and thanks so much!!!
  2. What a fun idea! And year around I think unless it's just too too hot to bake!! I am high risk. Staying home, staying away from stores and so on. Walking the dog a lot. Very antsy and getting anxious here in the US. I was hoping our cases would have started diminishing after our lock down that people would start wearing masks and it would be safer for us high risk people but we are a nation of psychopaths. Polls show 89 percent in favor of wearing masks but behavior shows differently! There is a part of me that wants to get exposed and get over with the worst and either die or move forward, but common sense prevails! I want to see my new grandbaby in Georgia and I'm in Minnesota!     • Hi Mollie, It was a lot of fun. I threw in some balloons too but Charlie got to most of them before anyone can see them. hahahahh I know what you mean friends and relatives of mine back in the states are a little frustrated with some that refuse to wear masks. :( I seriously can not understand it!! Please please try to stay positive...we all go have those negative thoughts. believe me I feel you!! But remember you have a family and grandbabies that are also waiting to see you!!! and us of course your blogging friends who love reading your posts and love those gorgeous recipes you post...Sending you huge hugsssss Sophie
  3. I can't remember the last time I had a chocolate chip muffin, but yours are giving me some serious cravings! I'm looking forward to trying them out!

  4. No icing is the best and my favourite way to eat any cake. I will use a napkin and get that stuff off any cake/cupcake. Muffins are for sure good year round! Not only for mornings either :) Great recipe as always. Thank you for sharing it with us :)
