Roasted Potatoes and Greek Sausage

I Hey there foodie friends,

Roasted garlic is an ingredient that is a must in this Roasted Potatoes and Greek Sausage recipe.  Isn’t putting all the ingredients in one pot or pan somewhat relieving?  Even though I love to cook, I sometimes need recipes that are all in one like this one.  As a vegetarian when meat is an ingredient in a recipe I make two recipes so that’s twice the work.  I don’t mind but when I have had very hectic weeks like the last few  I am glad that’s over and I can go back to my normal daily life.

This recipe is made with original Greek Sausages but if you have Italian sausages both are quite similar and taste amazing.  If you prefer spicy sausages go ahead and add them to the mix.  The dish is packed with potatoes cooked in a mustard-based sauce.  The potatoes that I used in this recipe are from a local farmer in my area who grows organic potatoes amongst other vegetables. I must admit that the local organic potatoes and eggs are of the best quality.

A delicious versatile recipe that invites you to add more ingredients. Two sliced green red bell peppers, leek, and a mustard sauce that is out of this world.  Lately, I’ve realized that I am starting to enjoy eating mustard again.  Maybe because there is such a huge variety from very mild, mild, hot, insanely hot, so many I’ve lost count.  I have tried a few brands, from very mild, to mild mustards, and have decided which ones I truly enjoy.

Roasted Potatoes and Greek Sausage is a hearty meal for those who love sausages and potatoes!  Don’t forget to add the garlic, and whole clove don’t peel it, and adding fresh squeezed orange juice is also a delicious treat in this recipe.  I didn’t add any this time, but if you’ve never tried this, go ahead and try it.

Tip: Boil the potatoes until slightly tender before roasting.

Ingredients
  

  • 2 sausages sliced
  • 1 kilo potatoes cut in halves
  • 2 leeks dice
  • 3 garlic cloves whole
  • ½ lemon juice
  • 3 tbsp mustard mild
  • 1 ½ tbsp fresh oregano
  • salt
  • pepper
  • ½ cup olive oil
  • 2 bell peppers green
  • ¾ cup orange juice optional

Instructions
 

  • Preheat oven to 180℃
  • Combine mustard, olive oil, lemon juice, oregano, salt, and pepper in a large bowl and whisk together.
  • Cut potatoes in halves and place them into the baking pan. Toss in the sliced sausages and green peppers, diced leek. and whole garlic cloves.
  • Generally pour the mustard sauce over the potatoes and sausage and cook for 35 to 40 minutes.
