The other day I was thinking about making a mug cake, a Pumpkin Mug Cake recipe. Since I’ve only tried it once in the past and it didn’t turn out well, I searched for a new recipe on the net and found one. This Pumpkin Mug Cake is from a fellow food blogger from Cookies and Cups. I must admit that even though I am not a big fan of pumpkin I just had to give it a try, I went to the market to buy canned pumpkin and pumpkin spice. I went to three different supermarkets to find pumpkin spice and I did in the last supermarket which is 20 minutes away from where I live.
I never truly liked pumpkin, but I wanted to give it another try just in case I was missing something. But there are a few types of food out there that I have never tried, and I don’t plan to. Escargot, for starters. I know many people do eat Escargot, but no, thank you. I know snails are a delicacy, but that doesn’t mean that they’re tasty for everyone.
Since Halloween is coming up in just a few days I wasn’t in the mood to make cookies this year. I preferred to make cinnamon rolls which I will post later this week and this mug cake. In just a matter of a few seconds, it was ready. I popped it into the microwave and waited for the cake to cool. I wanted to share this recipe with you. Pumpkin Mug Cake Recipe
Ingredients
- 1 tbsp pumpkin canned
- 2 tbsp water
- 1 tbsp vegetable oil
- 2 tbsp sugar
- ½ tsp vanilla
- ½ tsp baking powder
- ½ tsp pumpkin pie spice
- ¼ cup all-purpose flour
- ⅛1 tsp salt
Instructions
- Whisk all the ingredients together in a small bowl.

- Pour the batter into your favorite mug and microwave for 70 seconds or use a cake tester until it comes out clean. Top off with whipped cream and enjoy.
