How is everyone? I’ve been out with the worst case of the flu these past two weeks. My voice has not fully recovered, but I’m trying to avoid speaking as much as possible. I needed to get out of bed even if it was just for a little while over the weekend went to my kitchen, and decided to bake this Marble Cake. This moist marble cake is made with cocoa powder and a strong bourbon vanilla extract.
I usually eyeball these ingredients when making this cake. I’ve been baking it for years, but I may have gone overboard this time. I might have added more than I usually do of Bourbon Vanilla extract, but it didn’t matter. But don’t worry in the recipe card below I have written the correct amount you should add.
You know how it is, when you’ve been cooking, and baking you kind of sometimes eyeball the amount. So, why is this Marble cake so moist, it has to do with the butter. Here’s a tip the more time you whip the butter along with the sugar the better it is. I usually whip the ingredients for a total of 20 minutes to get that very creamy effect, but this time I couldn’t wait that long. I had to get back into bed.
When baking if possible try to use good quality butter, one of my favorites is unsalted Greek butter which is difficult to find here. But, I have a backup and I must admit that it comes quite close to the Greek butter. There are differences in European butter with the kinds of butter in the US and other countries. So, use the one that makes you happy and the result is exactly what you were looking for.
This is a simple recipe that most of you have made many times. For those who are just starting out baking, don’t worry too much about it take that chance. It might seem overwhelming with all the measuring, and counting but believe me it is simple. The only technical part that I found challenging when I first started baking was alternating the chocolate with vanilla dough while placing it in the mold. The chocolate part of this cake was made with leftover cocoa powder from my last muffin recipe.
Every time I bake this cake those childhood memories come running back. I am sure you also have those fond childhood memories, of watching your mom, grandmother, or dad baking away. Don’t you? My sense of taste and smell is slowly returning but even though I am not fully able to smell or taste, I made myself a cup of tea cut a slice of cake, and headed back to bed.

Moist Marble Cake
Ingredients
- 6 eggs large
- 1 cup butter room temperature
- ¾ cup sugar
- 1½ tbsp bourbon vanilla extract optional
- ¼ cup cocoa powder
- ½ cup milk
- 1 cup self-rising flour plus extra for mold and sift flour
- salt pinch
- confectioner sugar
Instructions
- Preheat the oven to 180C. Add the butter to a bowl and start by whipping at low speed and then gradually on high for about 5 minutes.
- Gradually add in the sugar and continue to whip until it turns into a creamy texture.
- Slowly add in the sifted flour and one egg at a time while still on high speed. Gradually lower the speed and add the rest of the ingredients except the milk and cocoa.
- Divide the batter in half. Add the milk to the cocoa powder and stir. Incorporate this mixture into one part of the batter. Stir in using a spatula.
- Butter and flour the baking pan. Toss out any excess flour.
- To get a marble effect start by adding a spoonful of vanilla batter, then a spoonful of chocolate until both batters are finished.
- Bake for about 55 minutes. Use a knife or cake tester to see if the cake is done.
- Set aside to cool off. Sprinkle with confectioners sugar
