Moist Marble Cake

A simple and tasty moist marble cake that will have you going back for more.

- 6 eggs large
- 1 cup butter room temperature
- ¾ cup sugar
- 1½ tbsp bourbon vanilla extract optional
- ¼ cup cocoa powder
- ½ cup milk
- 1 cup self-rising flour plus extra for mold and sift flour
- salt pinch
- confectioner sugar
Preheat the oven to 180C. Add the butter to a bowl and start by whipping at low speed and then gradually on high for about 5 minutes.
Gradually add in the sugar and continue to whip until it turns into a creamy texture.
Slowly add in the sifted flour and one egg at a time while still on high speed. Gradually lower the speed and add the rest of the ingredients except the milk and cocoa.
Divide the batter in half. Add the milk to the cocoa powder and stir. Incorporate this mixture into one part of the batter. Stir in using a spatula.
Butter and flour the baking pan. Toss out any excess flour.
To get a marble effect start by adding a spoonful of vanilla batter, then a spoonful of chocolate until both batters are finished.
Bake for about 55 minutes. Use a knife or cake tester to see if the cake is done.
Set aside to cool off. Sprinkle with confectioners sugar
