Hi there foodies friends,
It is almost time for the Food Bloggers Summit and I am very excited because this will the first one I will be attending. I decided to attend the Summit because even though I have been blogging for about 2 1/2 years, I still do need to learn more about Food Blogging. There is so much more to learn and do, and since this is something that I am so passionate about I am definitely going to take Food Blogging/my site to a different level. 🙂
Well, I did it I got my TESOL certificate…it took me a couple of months of studying and it was worth it. TESOL stands for Teaching English to Speakers of other languages. 🙂 Yep, I am definitely proud of myself and believe me this is something I would never usually say about myself. This past week was also quite a difficult one. Let’s just say that Charlie definitely showed us that he will step in and take action!!! I will write more about this in my next posts but for now, I will just leave it at what Charlie did.
I had prepared these delicious Mini-Tarts a few days ago. But with everything that has happened I was late posting the recipe. What I like about these Chocolate Tarts is that the added Cinnamon just gave the Ganache a unique taste. I was not able to make my own Crust this time. But in all honesty, I wasn’t in the mood to mix batter and then roll out the dough etc. I bought ready-made Crust from the supermarket. I knowwww!! !I cheated but as you already know I usually make my own, but not this time. 🙂

Mini Chocolate & Cinnamon Tarts
Ingredients
- 80 grams Butter
- ⅓ cup Sugar
- 1 Egg
- ½ cup All Purpose Flour
- 1⅓ tbsp Vanilla Extract
- Salt
- Chocolate-Cinnamon Filling
- 250 grams Pure Chocolate
- 1 tsp Cinnamon
- 1 cup Cream
- ⅓ cup Butter
Instructions
- Warm cream in saucepan for 5 minutes.
- Break Chocolate into smaller pieces. Add in cream and slowly mix until it becomes a nice smooth texture.
- Add butter and stir.
- Add Sugar
- Add Cinnamon
- Stir until the mixture becomes smooth and thick.
- Pour into cups and chill for about 2 hours at room temp
- Enjoy with a nice cup of Coffee or Tea

Congratulations on the TESOL!! We have something similar here – TEFL. So many letter combinations to remember 😂 You should absolutely be very proud, it’s a fantastic achievement!
Ready-made crust doesn’t count as a cheat when you’ve made the rest yourself. These sounds delicious and more straightforward than I thought (I’ve never made tarts before!) I assume the cream like a pot of double cream. I get confused with ‘cup’ sizes as I never really know how much to use because you don’t know the size of the cup being referred to. In the UK recipes are usually in grams but whenever I see a cup measurement I can’t help but think “You’ve not seen the size of my cups!” 😂

I might have bruised my nose trying to take a bite of these through my screen. These sound delicious, and I was thinking, just for testing sake of course, I might make 2 batches. One with the cinnamon, one without. That way if I don’t like the cinnamon added I still have just plain chocolate ones. Of course, we will eat them all because we wouldn’t want to waste them hahahaha 😉 🙂 You deserve to be proud about your certification. Thats a lot of hard work and you did it!!!! You deserve a pat on the back, AND a(couple)chocolate cinnamon tarts 🙂 🙂
