Herb Roasted Mushrooms with Feta Spread

We all have those days when we want to eat something simple, no fuss, no pots or pans.  Well, I have a delicious recipe for you: Herb Roasted Mushrooms with Whipped Feta.  A scrumptious Greek appetizer that is perfect for brunch, a light lunch, or a beautiful starter, or just for you.  Sound interesting?

Mushrooms are one of those ingredients that transform completely when roasted. They become golden, glossy, and full of deep, earthy flavor.  Roasting them instead of sautéing gives them that caramelized edge that makes this snack so good.

To give the mushrooms a little bit more taste, I just whipped a little feta to give a more creamy, tangy, smooth texture. It’s one of my favorite spreads because it adds brightness without overpowering the mushrooms. When you whip feta with a little yogurt and olive oil, it becomes velvety and light, the perfect contrast to the rich roasted mushrooms. Spread it generously on toasted bread, and you already have something delicious before the toppings even go on.  For the bread, I used a French baguette, but honestly, you can use any bread.

The final touch is fresh dill or, if you prefer, fresh parsley. That little sprinkle of fresh dill brings freshness and color. The combination of textures crispy bread, creamy feta, and warm mushrooms creates a bite that feels balanced and satisfying.

Herb Roasted Mushrooms with Whipped Feta Spread

A warm Mediterranean appetizer made with herb‑roasted mushrooms served over a creamy whipped feta spread. The mushrooms roast until tender and caramelized, then are spooned onto toasted bread with fresh herbs for a simple, flavorful bite. Perfect for brunch, entertaining, or an easy light meal.

Equipment

  • 1 Baking pan
  • 1 parchment paper piece
  • 1 medium-sized bowl
  • 1 whisk
  • 1 spatula
  • 1 garlic press

Ingredients
  

  • 2 cups mushrooms sliced (white mushrooms)
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 garlic minced (optional)
  • ½ tbsp oregano
  • salt
  • pepper
  • 4 slices baguette bread
  • fresh dill finely chopped

Instructions
 

  • In a medium-sized bowl, mix the 2 tbsp balsamic vinegar, 2 tbsp olive oil, 1 garlic clove, minced, and the ½ tbsp oregano
  • Sprinkle salt and pepper on the 2 cups mushrooms . Toss gently. Pour the mixture over the mushrooms and let it marinate for a few minutes.
  • Preheat the oven to 200℃, or if you prefer to air fry, set the temperature to 190℃ for 8 to 10 minutes.
  • Lay the parchment paper on the baking pan.
  • Gently fold the mushrooms onto the baking pan and spread in a single layer.
  • Cook for 15 to 20 minutes or until mushrooms are tender.
  • Remove from the oven and spread whipped feta on the 4 slices baguette bread.
  • Top with a few mushrooms and sprinkle with fresh dill.
  • Serve
