Herb Roasted Mushrooms with Whipped Feta Spread

A warm Mediterranean appetizer made with herb‑roasted mushrooms served over a creamy whipped feta spread. The mushrooms roast until tender and caramelized, then are spooned onto toasted bread with fresh herbs for a simple, flavorful bite. Perfect for brunch, entertaining, or an easy light meal.

1 Baking pan
1 parchment paper piece
1 medium-sized bowl
1 whisk
1 spatula
1 garlic press
- 2 cups mushrooms sliced (white mushrooms)
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 garlic minced (optional)
- ½ tbsp oregano
- salt
- pepper
- 4 slices baguette bread
- fresh dill finely chopped
In a medium-sized bowl, mix the 2 tbsp balsamic vinegar, 2 tbsp olive oil, 1 garlic clove, minced, and the ½ tbsp oregano
Sprinkle salt and pepper on the 2 cups mushrooms . Toss gently. Pour the mixture over the mushrooms and let it marinate for a few minutes.
Preheat the oven to 200℃, or if you prefer to air fry, set the temperature to 190℃ for 8 to 10 minutes.
Lay the parchment paper on the baking pan.
Gently fold the mushrooms onto the baking pan and spread in a single layer.
Cook for 15 to 20 minutes or until mushrooms are tender.
Remove from the oven and spread whipped feta on the 4 slices baguette bread.
Top with a few mushrooms and sprinkle with fresh dill.
