Greek Style Spagetti Bolognese

Hey, hey my foodies friends,

There are dishes that feel like home, no matter where you grew up. And this Greek Style Spaghetti Bolognese is one of them. But in Greek kitchens, this classic comfort food takes on a personality of its own. It’s richer, warmer, and full of Mediterranean richness.   I still find it fascinating that after all these years, everyone knows Moussaka, Pastitsio, Souvlaki, and Gyro. Growing up, this dish was a regular at our table. at least twice a week.  My mom would slowly simmer the minced meat.  This way, it would let the cinnamon, bay leaves, and allspice work their magic. Greek cooks have a way of taking something familiar and giving it a little twist.   A sprinkle of warm spices and a splash of good olive oil suddenly make the whole dish deeper.

What makes Greek Bolognese different is the balance of savory and warm flavors. Instead of the traditional Italian version with wine and herbs, the Greek version leans into cinnamon, cloves, and allspice. The same spices are used in dishes like pastitsio and moussaka. These spices don’t make the sauce sweet; they make it warm and cozy.

And then there’s the pasta. While Italians might choose tagliatelle or pappardelle, Greek families almost always reach for spaghetti. There’s something nostalgic about twirling long strands coated in that rich, slow‑cooked sauce. It’s simple, satisfying, and exactly the kind of meal that brings everyone to the table without needing to call them twice.

One of my favorite parts is finishing the dish with a generous handful of grated cheese. In Greece, we use kefalotyri or graviera, which adds a salty, nutty bite that ties everything together. But Parmesan works beautifully, too. A drizzle of olive oil on top, a bit of freshly ground pepper, and suddenly you have a bowl of pasta that feels both rustic and elegant.

Greek Style Spaghetti Bolognese

This Greek‑style Spaghetti Bolognese brings a Mediterranean twist to the classic Italian favorite. Made with a rich tomato‑based meat sauce, fragrant herbs, and the cozy flavors we grew up with. Simple, hearty, and perfect for busy weeknights.

Ingredients
  

  • 500 or 1 lb grams minced meat beef
  • 1 package spaghetti
  • 1 carrot cut into small cubes
  • 600 or 2 ½ cups grams tomato sauce
  • 1 garlic clove minced
  • ¼ cup olive oil
  • 1 red onion finely chopped
  • 1 cinnamon stick
  • ½ tbsp tomato paste
  • ¼ cup brandy
  • 3 allspice balls
  • 2 cups vegetable stock
  • salt optional
  • parmesan or kefalotyri cheese

Instructions
 

  • Heat up the ¼ cup olive oil in a pot. Add in the 500 or 1 lb grams minced meat and cook for 10 minutes.
  • Add the 1 red onion, 1 carrot, and 1 garlic clove, and sauté the vegetables until tender. Just make sure that the garlic and the onion do not change color.
  • Add the ½ tbsp tomato paste, stir. Pour in the ¼ cup brandy, 600 or 2 ½ cups grams tomato sauce, and toss in the 3 allspice balls. Stir to release the aromas.
  • Pour in the 2 cups vegetable stock, the 1 cinnamon stick and salt which is optional. Cook the meat on low heat for one hour.
  • In the mean time bowl the 1 package spaghetti in salted water.
  • Once the pasta and sauce are ready, serve it with your favorite salty cheese parmesan or kefalotyri cheese

  1. I can practically smell the cinnamon through the screen. Saving this for the next night I want my kitchen to smell like a Kefalonian taverna by the coast of Argostoli and my problems to politely wait outside!
