This Greek‑style Spaghetti Bolognese brings a Mediterranean twist to the classic Italian favorite. Made with a rich tomato‑based meat sauce, fragrant herbs, and the cozy flavors we grew up with. Simple, hearty, and perfect for busy weeknights.

- 500 or 1 lb grams minced meat beef
- 1 package spaghetti
- 1 carrot cut into small cubes
- 600 or 2 ½ cups grams tomato sauce
- 1 garlic clove minced
- ¼ cup olive oil
- 1 red onion finely chopped
- 1 cinnamon stick
- ½ tbsp tomato paste
- ¼ cup brandy
- 3 allspice balls
- 2 cups vegetable stock
- salt optional
- parmesan or kefalotyri cheese
Heat up the ¼ cup olive oil in a pot. Add in the 500 or 1 lb grams minced meat and cook for 10 minutes.
Add the 1 red onion, 1 carrot, and 1 garlic clove, and sauté the vegetables until tender. Just make sure that the garlic and the onion do not change color.
Add the ½ tbsp tomato paste, stir. Pour in the ¼ cup brandy, 600 or 2 ½ cups grams tomato sauce, and toss in the 3 allspice balls. Stir to release the aromas.
Pour in the 2 cups vegetable stock, the 1 cinnamon stick and salt which is optional. Cook the meat on low heat for one hour.
In the mean time bowl the 1 package spaghetti in salted water.
Once the pasta and sauce are ready, serve it with your favorite salty cheese parmesan or kefalotyri cheese
