This classic Greek-style ratatouille briam bake is sooo full of vegetables. Briam is part of that old‑school Mediterranean way of cooking vegetables, olive oil, herbs, and time. That’s it. Just layers of zucchini, potatoes, tomatoes, onions, and eggplants roasting slowly until everything softens, caramelizes, and melts together.
The Greek ratatouille shares a beautiful connection with the classic French ratatouille. Both recipes have simple vegetables, olive oil, and a slow roasting method. The French ratatouille is usually cooked on the stovetop, with the vegetables sautéed separately before being combined. It gives it a softer, more stew‑like texture. On the other hand, the Greek version is baked in the oven. This allows the vegetables to caramelize and develop that delicious flavor. Both recipes are similar in spirit, but each has its own Mediterranean charm.
I honestly don’t remember the very first time I tried this dish, and maybe that’s part of its charm. Greek Style Ratatouille (Briam)
Ingredients
- 8 eggplants (aubergines) sliced
- 5 zucchini sliced
- 2 onions large chopped
- 4 tomatoes grated
- 5 potatoes sliced in half
- 2 garlic cloves whole or minced
- parsley handful chopped
- 1 ½ cups olive oil
- 2 cups vegetable broth
- salt optional
- 1 tsp pepper
- 1 tsp sweet paprika optional
Instructions
- Preheat the oven to 200℃
- Add the 8 eggplants (aubergines), 5 zucchini, 2 onions, 5 potatoes, 4 tomatoes, 2 garlic cloves, to the baking pan. Combine the veggies.
- Drizzle the 1 ½ cups olive oil over the vegetables and use your hands to mix everything, making sure each piece is well coated.
- Sprinkle in the chopped parsley. Season with the salt, 1 tsp pepper, and 1 tsp sweet paprika.
- Pour in the 2 cups vegetable broth.
- Bake at 200°C for approximately one hour, or until the vegetables are tender when pierced with a fork.
