Greek Brunch Skillet with Eggs

Hello there,

I was on Facebook the other day when a cooking video by Chef Giorgos Tsoulis (Greek Chef) popped up.  He’s a young Greek chef with such a great sense of humor, and honestly, most of the time he makes me laugh when I’m watching his videos.  He was preparing this beautiful Greek Koulouraki with eggs dish, a simple recipe. The moment I saw it, I knew I had to try it myself.

The eggs are soft and runny, nestled between pieces of toasted sesame bread that soak up every bit of flavor. The creamy white goat cheese melts just enough to create those perfect pockets of richness. Now, Chef Tsoulis used feta cheese in his version, but you know me,  I always end up tweaking something. I went with goat cheese for a slightly tangier, creamier finish. 🙂 And wow, was that good!

I also used fresh tomatoes rather than canned ones because it’s tomato season, and honestly, why not use the good stuff? The sweetness of fresh tomatoes makes the whole dish brighter and more summery. right?  I also chopped a little dill and sprinkled some over the eggs before serving. Now, let’s talk pan. If you have a cast‑iron pan, absolutely go for it; it gives everything that gorgeous, rustic Greek‑taverna vibe. But if not, don’t panic. (Before I forget, you will also need a lid for the pan)  It will still do the job, and no one at the table will know the difference. 🙂

And when it comes to cheese, don’t stress there either. If you don’t have feta or goat cheese, just grab whatever melts nicely and has a salty or peppery kick. Anything that adds a little tang works. Honestly, Greek cooking is forgiving. 🙂   A sprinkle of fresh dill or thyme on top ties everything together, adding that familiar herbal note we all grew up with around the Greek table. It’s simple, comforting, and full of those flavors that make Greek home cooking special.

Greek Brunch Skillet with Eggs

Ingredients
  

  • 1 sesame bread ring Cut into equal pieces
  • 2 tomatoes large and grated
  • 4 eggs large
  • ¾ goat cheese or feta cheese Cut into thick slices
  • 1 tbsp oregano
  • ½ tbsp garlic powder
  • fresh dill finely chopped
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions
 

  • Place a cast-iron pan over medium‑high heat and add the 2 tbsp olive oil..
  • Add the 1 sesame bread ring that is cut into large pieces around the edges of the skillet.
  • In the middle of the pan, add the 2 tomatoes, 1 tbsp oregano, ½ tbsp garlic powder, salt, pepper, and the pieces of ¾ goat cheese or feta cheese between the bread.
  • Cover the pan with a lid. Cook for a few minutes so the sauce slowly starts to thicken.
  • Slowly crack and add in the 4 eggs. Sprinkle a little extra pepper.
  • Cover with the lid and cook until eggs are done.
  • Lastly, garnish with the finely chopped fresh dill.
  • Serve hot with fresh bread.
