Greek Brunch Skillet with Eggs

A simple and delicious Greek brunch skillet made with eggs, sesame bread, and soft white cheese. Ready in minutes and full of Mediterranean flavor. Perfect for brunch, lunch, or a cozy weekend meal.

Ingredients
  

  • 1 sesame bread ring Cut into equal pieces
  • 2 tomatoes large and grated
  • 4 eggs large
  • ¾ goat cheese or feta cheese Cut into thick slices
  • 1 tbsp oregano
  • ½ tbsp garlic powder
  • fresh dill finely chopped
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions
 

  • Place a cast-iron pan over medium‑high heat and add the 2 tbsp olive oil..
  • Add the 1 sesame bread ring that is cut into large pieces around the edges of the skillet.
  • In the middle of the pan, add the 2 tomatoes, 1 tbsp oregano, ½ tbsp garlic powder, salt, pepper, and the pieces of ¾ goat cheese or feta cheese between the bread.
  • Cover the pan with a lid. Cook for a few minutes so the sauce slowly starts to thicken.
  • Slowly crack and add in the 4 eggs. Sprinkle a little extra pepper.
  • Cover with the lid and cook until eggs are done.
  • Lastly, garnish with the finely chopped fresh dill.
  • Serve hot with fresh bread.
