Greek Brunch Skillet with Eggs

- 1 sesame bread ring Cut into equal pieces
- 2 tomatoes large and grated
- 4 eggs large
- ¾ goat cheese or feta cheese Cut into thick slices
- 1 tbsp oregano
- ½ tbsp garlic powder
- fresh dill finely chopped
- 2 tbsp olive oil
- salt
- pepper
Place a cast-iron pan over medium‑high heat and add the 2 tbsp olive oil..
Add the 1 sesame bread ring that is cut into large pieces around the edges of the skillet.
In the middle of the pan, add the 2 tomatoes, 1 tbsp oregano, ½ tbsp garlic powder, salt, pepper, and the pieces of ¾ goat cheese or feta cheese between the bread.
Cover the pan with a lid. Cook for a few minutes so the sauce slowly starts to thicken.
Slowly crack and add in the 4 eggs. Sprinkle a little extra pepper.
Cover with the lid and cook until eggs are done.
Lastly, garnish with the finely chopped fresh dill.
Serve hot with fresh bread.
