Hello there,
This is a go-to easy Frittata with Veggies recipe packed with flavors. It’s a simple and versatile recipe made with fresh ingredients. that I have in the fridge. To make this Frittata recipe, I used a bit of grated Greek smoked cheese, which enhanced the taste, and parmesan cheese for that slight saltiness.
Now, you might be wondering what a Frittata is, for those who are now starting to cook a Frittata is an egg bake. This frittata is an egg bake with vegetables sound good? Some say that a frittata is similar to a Quiche. They may be right, but I don’t see it. So here’s what I know to prepare a Quiche you need a pie crust. To prepare a frittata you need eggs and for my frittata, you will need a cast iron pan. Of course, the ingredients may be slightly similar but in a quiche, you need to add cream for stability.
The vegetables that I used to prepare this recipe are peas, broccoli florets, leeks, and spring onions. I did use two red bell peppers, but here’s the kicker to this recipe, I’ve also added goat cheese. There are three types of cheeses in this frittata, smoked cheese, parmesan, and finally goat cheese. Adding cheese to a frittata gives it a flavor boost. But again this is up to you, you can add the cheese or not. I have also added fresh cherry tomatoes which I cut in halves to give it more sweetness.
While driving through Greece there is a small town nestled in the Pindos mountains called Metsovo. If you’ve never heard of this town you can google it. It’s a beautiful town with views that are just breathtaking and this town is well known for its cheeses and the unique way they grill meat. I bought Mestovitiko Smoked Cheese and Greek Parmesan cheese. Yep, you read it correctly they make Parmesan Cheese and I have to admit it is quite good.

Frittata with Veggies Recipe
Equipment
- 1 cast iron pan medium size
- 1 mixing bowl with a pour sprout, its much easier. (optional)
- 1 egg whisk
- 1 spatula silicone
Ingredients
- 8 eggs large
- 2 red bell peppers chopped
- 1 leek chopped
- 3 spring onions chopped
- 1 ½ cup broccoli florets
- ⅓ cup peas
- ¼ cup fresh dill finely chopped
- ½ cup parmesan cheese grated or flakes
- ½ cup goat cheese shredded. (optional)
- ¼ cup smoked cheese grated
- ¼ olive oil
- ½ tbsp paprika
- salt
- pepper
- 10 cherry tomatoes cut in half
Instructions
- Preheat oven to 190℃/375℉.
- Whisk together in a large bowl the eggs, parmesan cheese, salt, pepper, and paprika.
- Add the olive oil to the pan. Saute the vegetables and add in the dill. Stir for a few more minutes.
- Toss in the shredded goat cheese and smoked cheese. Use the spatula, stir slowly and combine the ingredients.
- Pour in the egg mixture and place into the oven for 25 minutes. Serve hot.
