Hey there foodie friends,
How is everyone doing? I don’t know if you remember, but I took part in a European Union and USA Project called “Fresh-up Your Life” last year”. I am back collaborating again on the same project, so here is a recipe that I am sure you all already love!!.

Tomato sauce conchiglioni
10 oz Conchiglioni
10 oz Mozzarella
2 oz Grated Parmesan
1 clove of garlic
1 Onion
21 oz Tomato sauce
1 tbsp tomato concentrate
2 springs of thyme or oregano
Sugar
Extra virgin olive oil
Salt
Pepper
Cut the mozzarella into cubes and dry the water in excess on absorbent paper sheets.
In a saucepan, sauté the chopped garlic and onion over low heat with 2 tablespoons of oil for 2-3 minutes.
Add the tomato sauce, a spoonful of concentrate diluted with a little hot water, a pinch of sugar and salt. Cover and carry on cooking for 25-30 minutes, adding a little hot water
if needed, until a thick sauce is obtained.
Season with salt and pepper. Meanwhile, cook the pasta in boiling salted water for the time indicated on the package.
Drain it, transfer it to a bowl and season with the sauce, 2 oz of Parmesan, 2/3 of the mozzarella and a drizzle of oil.
Pour everything into a lightly greased pan, spread the remaining mozzarella and cheese on the surface, a few sprigs of thyme and brown in a preheated oven at 392°F for about 20 minutes. Remove from the oven, let it rest for 3-4 minutes, then serve with more thyme or oregano.
