My Easy Spinach Gratin Recipe is one of those recipes that is rich and simple. It’s the kind of dish that makes you pause for a moment when you take it out of the oven, watching the cheese bubble and the edges turn crisp.
I had fresh spinach sitting in my fridge. I needed to use it up before it started to wither. The spinach becomes wonderfully tender, the creamy sauce wraps all the ingredients, and then there is the cheese. Oh, the cheese! It melts into the sauce and creates a beautiful golden crust on top that makes you want to grab a spoon before it even reaches the table. And yes, I did have a little taste before serving. I mean, someone has to make sure it’s good, right? We food bloggers call that quality control. 😉
For the sauce, I didn’t go bechámel, this time. I made a simple sauce using cornflour. To clear things up, cornflour is not the same as Cornstarch. Cornstarch has a white coloring to it and has a very fine texture. Whereas cornflour is a pale-yellow, coarser whole-kernel grind. (So keep that in mind) It’s also much quicker to make when you use cornflour.
The sauce was ready in about 5 minutes. I had already prepared all the other ingredients, and so all I had to do was combine all the ingredients and pop it in the oven. The spinach suddenly softens into the sauce, and when you top it off with the cheese, it slowly transforms into that gorgeous golden crust.
I know, I know… You might be drooling just about now and standing in front of the oven, wondering why food can’t cook faster. But give this one a little time. hehehe. It’s creamy enough to scoop up with a slice of bread, cheesy, and full of spinach.
You can serve this delicious Easy Spinach Gratin Recipe as a main dish or as a small side dish. (small portion) 🙂

Easy Spinach Gratin Recipe
Ingredients
- 1 lbs fresh spinach washed and drained
- 1 leek washed and sliced
- 4 fresh spring onions washed and sliced
- ¼ cup olive oil
- 3 tbsp fresh dill finely chopped
- 2 tbsp fresh parsley finely chopped
- 1 cup cheese mix grated cheese that melt
- salt
- pepper
- Sauce
- 5 cups milk
- ⅔ cups cornflour
- ½ cup butter room temperature
- 1 cup cream cheese room temperature
- 2 eggs
Instructions
- In a shallow pot, heat the ¼ cup olive oil and sauté the 4 fresh spring onions and the 1 leekfor a few minutes.
- Preheat oven to 180℃.
- Add the 1 lbs fresh spinachand continue sautéing for a few minutes until all the liquid evaporates.
- Sprinkle with 3 tbsp fresh dill, 2 tbsp fresh parsley, salt, and pepperemove the pot from the heat.
- In a large saucepan, mix the 5 cups milk with the ⅔ cups cornflour and the butter until the cornflour dissolves. Sprinkle half of the 1 cup cheese mix and stir until the sauce thickens.
- Transfer the mixture to the heat and stir.
- Once the cream thickens, remove the pot from the heat and slowly incorporate the 1 cup cream cheese stirring until they melt.
- Add the 2 eggs, stirring quickly so they blend evenly, and the ½ cup butter.
- The last step is to add the sautéed ingredients and mix until well combined.
- Pour the mixture into the baking dish and sprinkle the surface with the remaining grated cheese mix.
- Bake the spinach gratin at fan setting, on the middle rack, for about 40 minutes.
- Remove the baking dish from the oven and let it cool before cutting it into pieces.
