After having a festive Easter with a huge variety of dishes, it was time to return to simple eating.  I found potatoes in my pantry and went for this delicious and simple Easy Crispy Roasted Potatoes recipe.  It is one of the easiest recipes to make, throw all the ingredients into one large bowl and then into a large baking pan—deliciously browned crispy potatoes outside and soft with a creamy middle inside.  These roasted potatoes are a delicious side dish with burgers, fish, and even a treat.

I prepare these crispy roasted potatoes for lunch many times, it’s easy.  One step that may be considered time-consuming is cutting the potatoes.  But how much time does it take?  Once you get the hang of it you can cut potatoes in 5 minutes.  I cut up a few potatoes with their skin sprinkled different spices and gave the potatoes a good toss.  Now, when I say toss I mean toss, by the way, I do the same things when I toss salad.  I have a large plastic bowl, I throw all the ingredients into the bowl and shake shake shake, and toss toss toss it up.  I let the potatoes sit for 10 minutes and then transfer them to the baking pan.

My tip or trick that I mentioned above might sound odd but if you’ve never tried it then just give it a shot and see for yourself.  Don’t you believe that preparing a simple dish is better?   Well, then go ahead and try this classic Greek recipe which is probably one of the most favorite main or side dishes.  All you need for this easy crispy roasted potatoes recipe are a few ingredients and you’re ready!

I mean seriously do you know of anyone who doesn’t love potatoes cooked in any sort of way, fried, baked, roasted, or boiled?

Easy Crispy Roasted Potatoes

Ingredients

  • 10 potatoes large with skin
  • ¼ cup olive oil plus 3 tbsp olive oil
  • tbsp smoked paprika
  • ½ tbsp pepper
  • ½ tsp garlic powder
  • ¼ tsp salt (optional)

Instructions

  • Preheat oven to 220C. Wash and cut the potatoes into halves leaving the skin on.
  • Place the potatoes into a large bowl with water and wash thoroughly.
  • Drain and pat dry place the potatoes into the large bowl, drizzle olive oil and the spices onto the potatoes.
  • Close the lid of the plastic bowl and give it a few good shakes. Let it sit for 5 minutes.
  • Drizzle 3 tbsp of olive oil onto the bottom of the baking pan. Transfer the potatoes to the pan and place in the oven for 30 minutes. Roast until golden brown and crispy on the outside.
