Creamy Spicy Homemade Tomato Soup

Creamy Spicy Homemade Tomato Soup was one of the first recipes I posted when I first started blogging.  But I have made a few changes as I was going along and I think this last recipe is the one I am happiest with.  I have added ingredients, I have omitted some and well you need to try this for yourself to see what I mean.   Soup is always my go-to comfort food when I am freezing like I have been these past few days and when I am upset.   It’s funny I have friends that like to eat salads when they are upset.  hmmmm.  What do you like to eat in these types of situations?  And I don’t want to read junk food!! hehehe

My original recipe consisted of carrots, chicken broth, and a few other ingredients which I don’t remember off-hand.  Anyway, for this Creamy Spicy Homemade Tomato Soup recipe this time around I added dried tomatoes, leek, and Celery.  Interested?

Creamy Spicy Homemade Tomato Soup

A creamy spicy tomato soup made with fresh tomatoes, dried tomatoes.

Ingredients
  

  • 1 Leek chopped
  • 1 Celery Stick chopped
  • 4 Dried Tomatoes
  • 6 Fresh Tomatoes
  • 3 cups Vegetable Broth
  • 1 tbsp Sugar
  • ¼ cup Olive Oil
  • 1 tsp Chili Flakes
  • 1 Paprika Pepper chopped
  • Pinch of Salt

Instructions
 

  • Chop celery stick, leek, and paprika pepper. Add into a blender or food processor with dried tomatoes and beat until finely chopped. Peel tomatoes and add to the mixture along with the olive oil. Beat for 3 minutes.

  • Add mixture into a pot and boil on low heat. Pour in the vegetable broth, sugar, salt, and chili peppers. Boil for 20 minutes or until thickened.

Welcome to a small corner of my Greek Heritage. Growing up in New York from Greek parents, was a challenge of its own...but the traditional food, tastes and aromas that my mother cooked always travelled me back to Greece. My mother is a wonderful cook, our house would always have that smell of home cooked food. I remember very clearly that we were only allowed fast food, once a week, that was a huge day for myself and my brother. Jumping up and down in the back car seat, laughing, just being kids. It is true that we all like to eat different foods, taste, smell, even try food that looks different than our regular meals at home and I think that is so natural. In my teens, I was not really into cooking, I enjoyed my magazines after school, listening to music, and just taking a breather. There were times that I would glance at some of my mom's recipes, more out of curiosity than to actually try to cook them. At that time I did not realise that cooking would become my passion one day. Slowly, I would start to look into my mom's recipes a bit more each day and I started to find it interesting as a hobby. Each month I would go into our neighborhood bookstore and pick up my monthly book, until one day I decided to stroll over into the cooking section. That summer was the first time I actually bought a cooking magazine....and I loved it. Cooking and baking started out as a hobby, but now after many years it is my passion. Exploring the cuisines, the spices, the oils, the scents, the variety of smells and tastes that exist. It was and still is an amazing journey without limits.     What a great pop of color ❤️. I adore tomato soup and this spicy version sound amazing!
