Creamy Avocado Dip

Happy New Year everyone!!!  This is my first post of the year.  I needed to take some time off from blogging and evaluate what I have been doing this past year, and what I would like to achieve this year.  I do have a few goals that I have already started working on,  and I am definitely keeping my fingers crossed that I will hit my goal.  If you have set any goals for this year I would love to hear them. 🙂 

Thinking back to my childhood, I remember how much I loved the holidays. I remember my mom used to take us to Radio City Music Hall to watch the Christmas show.  Then we were off to Rockefeller Center for Ice Skating, lunch, and shopping.  I also looked forward to family and friends gathering at our home.  My mom cooking up a storm, setting the table for 20+ people. laughing, eating, in a greek household there was a lot of food on that table.   And of course, let’s not forget the presents.  (Remember growing up, still a child). 

This year after many years of hosting, I think it is more than 20 years I decided not to cook and just enjoy the holidays.  And I truly enjoyed it!! 2019 was another very difficult year for me, in all aspects of my life and this time off truly helped.

So as a very dear friend of mine Lesley always tells me when she sees me is Upwards and Onwards.  So, here I go!!!  I thought I would start out the year with a recipe by cooking light meaning simple, and yet delicious dip.  Made in less than 10 minutes, with very few ingredients. 

If you love to eat Avocados then please go ahead and try out this one.  I ate the whole thing…couldn’t help myself. 🙂

Creamy Avocado Dip

A delicious appetizer for those who love Avocadoes, simple to prepare and combined with lemon juice gives this dip a creamy texture and yet delicious taste. Great for parties.
Prep Time 10 minutes
Course Appetizer
Cuisine Mexican
Servings 6 people

Ingredients
  

  • 3 Avocados cut in half
  • ½ tbsp Lemon juice
  • ½ cup Parsley
  • ½ Onion
  • 1 Tomato
  • Salt

Instructions
 

  • Place Avocado without the peel into a food processor or blender.
  • Add Parsley, Lemon Juice, Tomato, Onion, and blend on medium speed until smooth. Add a pinch of salt at the end and give it a good couple of turns.
  • Place dip into a bowl and set it aside in the fridge for a few hours.
  • Serve with crackers as a dip or top off baked Fish.

  6. This dips looks so yummy and creamy. I have never used blender for it, always used a fork to smash the avocados, will definitely give this one a try. Happy new year to you!
