Christmas Roasted Pepper Dip

Hello friends,

So, it was time to hit the drawing board and start looking for Christmas appetizer recipes. I have decided I won’t make too many appetizers this year but a few that are easy to prepare and assemble.  The first appetizer I chose was this Spicy Pepper Dip.  If you’re entertaining this Christmas this appetizer recipe will surely be a hit.

I also needed to be more creative so I took out my cookie cutters.  I always have tortillas in my pantry so I took out all my Christmas star cookie cutters made my Christmas stars tortilla chips and piped on my Spicy Pepper Dip.  After testing a few sizes I finally decided on a size 2 star-shaped cutter.   I used a cookie-cutter chart to figure that one out.  I have a set of 5 pcs star cookie cutters some were small or large, you know what I mean.

Once I was done with the first step I went on to prepare the dip, I placed all the ingredients on my counter and started to prep, the peppers, feta cheese, and garlic we certainly cannot forget the garlic!  To make it spicy I added half of a chili pepper. But before piping the dip onto the tortilla, I popped them into the oven for about 5 minutes until golden brown. The tortilla stars turned out exactly how I wanted them golden brown and crispy.  I set them aside to cool off.

I only made a few of these mini appetizers to see how they would turn out. As far as the dip is concerned I’ve been making this Spicy pepper dip for so many years that I know this one by hard.  But baking the star-shaped tortillas was new for me.  I think my first Christmas Roasted Pepper dip turned out beautifully.

Christmas Roasted Pepper Dip

A combination of roasted peppers, and feta cheese on a star-shaped baked tortilla

Equipment

  • 1 food processor or blender

Ingredients
  

  • 6 florini greek peppers  peppers in a jar
  • ½ cup feta cheese
  • ¼ cup olive oil
  • 1 garlic clove
  • fresh dill finely chopped
  • 1 chili

Instructions
 

  • Preheat oven to 160c. bake tortilla chips for 5 minutes or until golden brown. Add all the ingredients to the food processor or blender. Beat on high speed until nicely combined.
  • Pipe the dip onto the star-shaped tortilla, or your favorite cracker, and or bread.
