Cappucino Coffee Cake

Hey hey,

I hope everyone is doing well……Let’s talk about cakes. Coffee cakes have always had a special place in my heart. I’ve loved the classic version with that buttery, crumbly topping since I don’t know forever. 🙂 It’s one of those cakes “one more bite… okay, maybe two” situations. If you’re on the hunt for a simple coffee cake that’s unbelievably tasty, this Cappuccino Coffee Cake is the one. One slice of this soft, fragrant, coffee-tasting yumminess and you’ll understand exactly why I love it.

I’ve tried this cake before, but for some reason, I wasn’t really into it.  It could have been the recipe, the coffee, or even the garnishing.  I’m not sure why it didn’t sit well with me at the time.  But this time I switched a few ingredients around, and well, it turned out amazing. This Cappuccino Coffee Cake is tender, fragrant, and has that subtle coffee flavor. Baking a cake is a reminder to slow down, to measure, mix,  and let your kitchen fill with warmth and a lovely aroma.

Cakes come in all shapes and sizes. There are layered, frosted, glazed, sprinkled, and I can go on and on. Then there are the quiet, humble cakes. The ones that sit on the counter, waiting patiently, knowing they’ll be the first thing you reach for when you need comfort. (Sometimes I shock myself with this poetic writing thing that I do) hahahahah. Ok, so why does this cake work each and every time? It’s simple, it’s moist and tender, thanks to the perfect balance of ingredients. It has that delicious coffee flavor, and it stays soft for days. (if it lasts that long). 🙂

So, my dear friends, if you’ve never tried coffee in a cake, this is your chance. This Cappuccino Coffee Cake is a winner! :). A small note: To give this cake its rich cappuccino flavor, I started by grinding fresh coffee beans and brewing them just as I would for a real cappuccino.   (For the glaze, I added icing sugar and a few drops of coffee)

Capuccino Coffee Cake

This Cappuccino Coffee Cake isn’t just a recipe, it’s a mood. A cozy, comforting, “take a breath and enjoy this” kind of mood.

Cook Time 40 minutes

Ingredients
  

  • 1 ⅓ cup self-rising flour
  • ½ cup dark brown sugar
  • ¾ cup butter room temp
  • cup sugar
  • 3 eggs large
  • 3 tbsp espresso coffee grind the coffee beans
  • 1 ½ tbsp vanilla extract
  • ½ tsp salt optional

Instructions
 

  • Preheat the oven to 180℃.
  • Whip the ¾ cup butter, ⅓ cup sugar, ½ cup dark brown sugar, until light and fluffy.
  • Add in the 3 eggs, one at a time. Then use a spoon and add the 1 ⅓ cup self-rising flour. Continue to whip until well combined.
  • Pour in the 3 tbsp espresso coffee, 1 ½ tbsp vanilla extractand ½ tsp salt.
  • Grease the bundt cake mold.
  • Pour in the batter and bake for 40 minutes or until golden brown.
  • Let the cake cook off completely before cutting.
