Calamari and Shrimp Giouvetsi (Orzo Pasta)

Hey, there fellow foodies,

I hope you are well, washing those hands and basically staying away from crowded areas.  I am not going to go into this whole virus situation. So, let’s talk about fooodd!!!

I went to the local Fish Market in our town and found some fresh Calamari and Shrimp.  While I was in the supermarket I noticed that the Frozen Fish section was empty??  Now, this is never empty, could it be that people are now starting to realize that eating fish is better than eating Steak and French Fries or Fast Food!!??  I do hope so…

But I am loving that more people are now starting to enjoy cooking.  There seems to be a trend lately with regards to Cooking Classes.  And this is super exciting because people are now understanding that cooking can be fun.  Some of my friends are not really fans of cooking. So, I told them to do what I like to do is pretend to be a scientist and I am experimenting with different scientific liquids, but in fact, it’s cooking ingredients.  heheheh

Ok, so about this was one of the recipes that I had prepared for our Clean Monday (Kathari Deutera) on Saturday. 🙂  This Greek recipe is traditionally baked and prepared with meat, but you know me I love to try something different.  So, this is a One-Pot recipe and it was so easy to make.  Sure, it took me about  1 1/2 hours but it was definitely worth it. I was going to add in Mussels but the shop was all out.  Next time, I will definitely add some Mussels.

Calamari and Shrimp Giouvetsi

A One-Pot Seafood and Orzo Pasta Recipe
Prep Time 30 minutes
Cook Time 1 hour
Course Main Course, Seafood
Cuisine Mediterranean
Servings 4 people

Ingredients
  

  • 2 cups Orzo
  • ¼ cup Onion
  • ¼ cup Fresh Scallions
  • 4 Stems Parsley (chopped)
  • 1 Litre Vegetable stock
  • ½ cup White Wine (Dry)
  • ½ cup Olive Oil
  • 1 cup Shrimps
  • 2 cups Calamari
  • Salt
  • Pepper
  • 1 tbsp Estragon Herb (Taraggon Spice)

Instructions
 

  • Add 1 tablespoon of olive oil and onions. Stir until golden brown.
  • Add in chopped Parsley continue stirring.
  • Slowly add in Orzo pasta and stir for 5 minutes.
  • Stir in Oil and Wine. Boil for 5 minutes
  • Pour in Vegetable Stock, Seafood and continue to stir until the stock as absorbed.
  • This dish can be eaten hot or cold.

  2. I love the combination with orzo 😋 Well done dear Sophie! I’m glad people are starting to cook more at home! We can have so much fun in the kitchen and then definitely the food is healthier 😉
