Blueberry Muffin Delight

I enjoy reading a good book, and watching a good series or movie..at the moment I am between two books the first one is from fellow blogger James J. Cudney, from  thisismytruthnow.com “Watching Glass Shatter” who just published his book, how exciting for him and for us who has the chance to read his book!! 🙂  What can I say except that I love it!!  I still have a way’s to go but believe me it is fantastic!!!.  I follow Jay’s blog, and even though I am a fan, I have to be honest here, Jay has another writer on his blog and he is  my absolute favorite Ryder!! some really funny posts there. 🙂 🙂 🙂 🙂   Sorry Jay hahahahaha.  

Now, the second book was recommended by Dee dee from Invisible-no-more.com,The Wife Between Us”, I am bit behind on this one , but this is also a great read!! Both books just grab your attention from the very first page.  Thanks Dee dee for recommending this book!!!  🙂  If you haven’t read either one yet, I absolutely recommend them.  🙂

So, I needed to take a break from reading,  🙂 and I decided to binge watch Scandal. 🙂   I had to catch up on what was going on.  I started it Friday night and continued until late Sunday night and Oh my gosh!!! The twists and the turns,  Olivia and Grant, Cyrus Ohhhhhhhhh!!!!  I am up to the 6th season, episode no. 14, WOW!!  I didn’t see any of these twists coming.  If you have watched or are watching this series well, you know what I mean. 🙂  

I wanted to make a snack for the weekend, and since I am not really a popcorn kind of person, and I definitely didn’t want potato chips, sweet is what I was going for along with a nice cup of coffee while I watching the series,  I thought why not make a batch of Blueberry muffins.  I know, I know, muffins over pop-corn, and potato chips…yeah well, why not something different. I had the ingredients ready on the counter, and off I went to make the muffins.  🙂

I hope you enjoy this recipe!!!

Ingredients:

200 grams All purpose flour

1/2 teaspoon Salt

2 teaspoons Baking Powder

150 grams Sugar

1 Egg

1/3 cup of Vegetable oil or 1/3 cup of  melted Butter

1/2 cup of  Milk

1 teaspoon of Vanilla extract

1 cup Frozen or Fresh Blueberries

Preparation:

I used frozen blueberries, so I defrosted them in a bowl overnight,  The following morning I drain juice before using.

In a large bowl whisk flour, baking powder, sugar and salt.

Add vegetable oil or butter, egg milk and Vanilla extract.

The batter should become thick as shown in the photo.

Fold in the blueberries, and mix slowly until all is combined.

Fill cupcake forms and then bake at pre-heated oven at 150 degrees for 25 minutes.  Of course, this all depends on your oven.  I bake my muffins at a lower temperature so that the batter is baked thoroughly.   I realised that when I baked them at a higher temperature the batter was almost always unbaked, so that meant throwing them out and starting over again.  🙁
