Hello foodie friends.
So, how is everyone? Is there anyone out there???? Yesterday, was really quite scary. On a normal day, I would take Charlie out early in the morning. But due to the circumstances I now take him out around 11 am. So, this is what happened, I opened my front door, walked out and there was NO ONE on the streets. I looked to my left then to my right and could not see ONE HUMAN BEING!! I said to myself, well Sophie just pretend it’s August and everyone is on vacation, and that’s what I did. At some point, I felt like I was the only person on the planet. I think I must have looked over my shoulder maybe a dozen times. This is wayyy too disturbing, not seeing anyone, not saying good morning, ohhhh I hope this ends soon.
In spite of everything that is going around us, I needed to take a break even if it’s only for 30 minutes to focus on something else. 🙂
Alrighty, so the news of the week I finally found a YOGA class that I really like and it’s on youtube. Yep, after doing a bit of research, and not finding anything close to me I decided to look on youtube. I would have liked to find one class in my area so that I could socialize with other humans. But this is fine, I don’t mind. 🙂
I started a couple of days ago and I had an audience. Charlie of course 🙂 now that was hysterical. Every time he would see me do a certain positive he would tilt his head from one side to the other. My first lesson was more laughing at what Charlie was doing rather than focusing on the lesson. I couldn’t help it, it was sooooo funny!!
I looked into my pantry and wanted to make a recipe with potatoes. Simple, quick and very tasty…there was a while that I was so fed up with eating just potatoes and tomatoes. This was due to veryyyy difficult times I was going through in my life back in 2010. But lately, I have started to enjoy eating potatoes again, and the truth is that Greek Cuisine does have so many wonderful recipes with potatoes. 🙂 I hope you enjoy this one!!

Beer Roasted Baby Potatoes
Ingredients
- 15 Baby Potatoes washed and slices
- ¼ cup Olive Oil
- ½ cup Lemon Juice
- 1 tbsp Oregano
- 1 cup Beer
- 1 ½ tbsp Dijon Mustard
- Salt
- Pepper
- Aluminum foil cover
Instructions
- Pre-heat oven to 180. Place potatoes into a baking pan. Sprinkle with a pinch of salt and pepper
- Add beer
- In a small bowl mix mustard and olive oil. Pour onto potatoes and top with Oregano.
- Cover with foil.
- Bake for 45 minutes. Time reference depends on the oven
