Summer is here!!! We reached the first week of July, can you believe it!! I think the first part of the year went by extremely fast. As I was saying the month of July has arrived, and it is BBQ time, and definitely Salad Time!!! These delicious little beans translated into English are called Beads. 🙂 Beads nice!! I believe that by adding a Summer Salad or this delicious Salad, is always a great side dish to our table.
These little gems are also a great winter soup. A simple, and quick soup to make for those cold winter evenings. I know, I know its hot outside but I am just giving you an idea for the Winter season, if you should want to try it out. 🙂 By adding a few more ingredients let’s say fresh tomatoes, carrots, celery and a few potatoes.

INGREDIENTS:
1 kilo beans
1 cup Red Peppers
1 Scallions (chopped)
1/2 cup of Parsley (finely chop)
1/2 cup of Olive Oil
3 tablespoons Lemon Juice
Salt & Pepper
PREPERATION:
Soak beans over night in water. Chop Red Pepper and marinade in 2 tablespoons of Olive Oil and Lemon Juice
Drain beans and add in marinated Red Peppers
Finely chop Parsley and Scallions.
In a large bowl add ingredients and top with Olive Oil.
Serve cold and enjoy!!
