Hello friends,
This Rustic Greek Village Dip is basically the Greek salad in a disguise as a dip. 🙂 Tomatoes, no cucumbers, red onions, feta, olive oil, herbs, all the usual ingredients. Honestly, the ingredients should look and sound familiar to you if you have tried the traditional Greek Salad. I didn’t have Kalamata olives, so I used Gaia Green stuffed olives instead, which worked perfectly and are actually the brand of my next collaboration. 🙂
I discovered this recipe while I was wandering around the internet. (as one does) There is this young Greek chef, George Tsoulis, whom I’ve been watching for a few years, pops up on my screen. He’s hilarious, full of energy, and cooks like he’s hosting a comedy show. The moment he made this dip, I commented immediately because it was such a refreshing idea and so very Greek.
The salty feta melts into the olive oil, the tomatoes get all juicy, and the herbs tie everything together. Add some crusty bread, and you’re ready to serve. This is perfect for gatherings or enjoying alone while pretending you’re on a balcony somewhere in the Greek islands. I’m curious which Greek island would you like to visit?

Rustic Greek Village Dip
Ingredients
- 2 tomatoes large and grated
- ½ red onion finely chopped
- 6 Gaia Green Stuffed Olives or Kalamata olives, pitted and sliced
- 1 ½ tbsp fresh parsley finely chopped
- ½ cup feta cheese crumbled
- 3 tbsp olive oil
- oregano
- salt
- pepper
Instructions
- Combine the 2 tomatoes, ½ red onion, 6 Gaia Green Stuffed Olives, 1 ½ tbsp fresh parsley, ½ cup feta cheese, 3 tbsp olive oil, in a large serving bowl.
- Season with pepper, salt, and oregano. Give it a good, gentle toss and serve with pita bread, bread or crackers.
