Rigatoni with Tomato Sauce

How is everyone?  There’s just something about a simple pasta dish that always hits the spot. No fancy tricks, no complicated sauces, just pasta, a good tomato sauce, and maybe a little cheese on top.  Rigatoni with tomato sauce is one of those classic comfort meals you can whip up in no time, and it always tastes like home.

I had some rigatoni sitting in my pantry and thought, Why not go back to basics? The beauty of rigatoni is its ridges and they grab onto the sauce perfectly, so you get flavor in every bite. And trust me, that sauce needs to be hugged by pasta, not sliding off like it has somewhere better to be.

Now, I know what you’re thinking: tomato sauce can be boring if you just open a jar. Nope, not here. A little olive oil, onion, oregano, a stick of cinnamon, and fresh or canned tomatoes.  Maybe even a pinch of chili flakes if you want to spice things up.  Voilà, you’ve got yourself a sauce that tastes like you’ve been cooking all day (even if it was only 20 minutes).  Remember, good quality olive oil makes all the difference when you are cooking.

What I love most about this recipe is that it’s adaptable. Craving something heartier? Add ground beef or sausage. Keeping it vegetarian like me, stick to the classic version and let the tomatoes do allllll the talking. But I do believe that a simple, comforting, and perfect pasta dinner is special.  This Rigatoni with Tomato Sauce is a quick weeknight dinner or a perfect option when you just need a bowl of pasta.  Especially the kind that doesn’t require too much fuss to prepare.

Who was it that said “Simple but yet Elegant”?  (I know this is for fashion, Coco Chanel) But it could also be said for food.

Rigatoni with Tomato Sauce

This Rigatoni with Tomato Sauce recipe is a classic pasta dish made with rich tomato flavor and simple ingredients like oregano, cinnamon stick, and onion.

Ingredients
  

  • 500 grams rigatoni pasta
  • 1 ½ cans diced tomatoes
  • 1 ½ tsp tomato paste
  • 1 cinnamon stick
  • 1 onion finely chopped
  • ¼ cup olive oil
  • 1 tbsp dry oregano optional
  • 1 tbsp sugar optional
  • parmesan cheese grated
  • salt
  • pepper

Instructions
 

  • Sauté the onion in the olive oil.
  • Add the grated tomatoes, tomato paste, cinnamon, sugar, salt, and pepper, and simmer until the sauce thickens
  • At the end, remove the cinnamon from the sauce.
  • Fill a pot with 5 liters of salted water and bring it to a boil over high heat.
  • Once the water starts boiling, add the pasta. Stir with a fork and let it cook either for as long as indicated on the package or to your liking.
  • Drain the pasta and drizzle 2 tbsp of olive oil. Mix gently
  • Serve the pasta with the sauce and sprinkle with grated cheese.
