It’s a chilly day today so a bowl of Lentil and Rice soup definitely makes the day warmer. It’s Soupseason so my Meal Plan is filled with wonderful tasty soups to be prepared. My mom told me that these kinds of combinations were prepared in Greek villages because food back then was scarce. The village women experimented with different ingredients something similar to a Recipe Developer today. They would combine Lentil and Rice, White Beans with Pasta to fill their family’s stomachs during winter season.
My hubby was not totally convinced about trying out this soup. His first reaction was “Ohhh great Lentil Soup” but once he saw the rice he kind of made beeline for the living room. 🙂 It took me a few tries to convince him to try it but he did, but he was still not crazy about it. Buttt what I did was add some spicyyyy and smoked paprika powder (which he is not allowed to eat) and loved it!!
Lentil is high in protein and iron, a delicious and healthy soup for all.
Have a great day everyone!!
