Hello everyone! this will be the last recipe I will be posting for the next two weeks, it’s that time of year, vacation time with hubby and Charlie our dog. 🙂 Road trip back to Greece, so internet access will be scarce on the road. Once we arrive, and I do have internet access, I will post various pictures of food, places well pictures for you to see. 🙂

Who doesn’t love cheese spreads. There are so many variations of cheese spreads in the greek cuisine, that are so easy to make in just a few minutes, so here is one delicious spread with a few ingredients. Great cheese spread for bread, crackers, fried Zucchini, Aubergine, or anything else you love adding cheese spread on. I know some people who actually put this on their pasta instead of sauces…:) A bit of information about the word Kopanisti the definition is: to beat something (Ko-pa-ni-so)…hahahaha…sometimes the definitions are funny. 🙂
The original recipe comes from the Aegean Islands of Tinos, Syros, and Mykonos. The cheese they use on these islands is not Feta cheese, they use a cheese that they produce called Tyrovolia. The taste is not the same as Feta cheese, it’s similarity is more towards cottage cheese.
Now, this recipe has been tweaked with Feta cheese, and with the delicious mix of yogurt, peppers, and Cayenne paprika, makes it spicy, salty with a mouthwatering taste you will enjoy.
Ingredients:
100 grams Feta Cheese
150 grams Yogurt (not the 0% yogurt full fat yogurt) 🙂
1 Paprika Pepper
1 teaspoon Cayenne Pepper
Preparation:
Slice pepper in half. All you will actually need is half of the pepper.
Add into the blender along with the yogurt.
Beat pepper and yogurt.
In a small bowl add the mixture into the feta cheese, and cayenne pepper, mix until it is nicely blended, and that’s it! Simple and delicious.
You can make this cheese spread, and eat it right away or it can be put in the fridge for a few days until consumption. 🙂

Came back from Santorini a couple of days ago. I’m in love with Greece. I make the same spread, I just add a teaspoon of olive oil in it. Amazing!
I am glad you enjoyed Santorini, it is a beautiful Island…Have you been to the Ionian Islands? I just got back from visiting family and friends on Saturday.
I’ve visited Corfu numerous times. I love Greek islands. Thessaloniki and Athens are cities I visit often.
Cefalonia is where my husband is from beautifullll and Zakynthos of course.
I lived in Athens for about 25 yrs….I love Thessaloniki. 🙂
