Grilled Chicken Souvlaki on a stick (Kotopoulo Kalamaki)

Hi, I hope everyone had a lovely weekend.  I have this great Chicken Souvlaki or Kalamaki recipe, which actually translates into Chicken on a stick. Hmm, anyway in Greece when you go to a Soulvaki Fast Food store,  (I call it a fast food store because it’s all put together rather quickly), you can either order the usual Pork souvlaki with pita, or you can order (which I personally prefer), Pork or Chicken Kalamaki along with bread which has been dipped into lemon-oregano-salt-pepper  sauce. Yummmmmmyyyy

What I usually do is leave the chicken in the marinade sauce overnight in the refrigerator. This makes the chicken tender and absorbs all the aromas from the ingredients that have been added into it.

Ingredients:

500 grams of Chicken Breast chopped into small pieces

1 Red Bell Pepper

1 Green Pepper

1 Large Onion

1/2 cup Olive Oil

1 Lemon Juice

Oregano

Bamboo skewers

Salt

Pepper

Mix all the ingredients in one bowl and leave in the fridge overnight.  The following day take one skewer at a time and start the threading process with a piece of chicken and continue with pepper, onion etc.

Since, my husband was at work, I decided to oven bake/grill them instead of starting up the whole bbq process.  Bake at 200 for 1/2 hour and then grill on each side for about .  :)10 minutes.

Here is a really good tip…soak the bamboo skewers in water for 4 hours….this makes it easier to thread them. 🙂
