Spinach, rice, and fresh herbs are a tasty and healthier combination, even for those who do not fancy Spinach. Let’s not forget the fresh lemon juice drizzled over this delicious dish.

When my mom used to prepare this for us she always would have a little something extra on the table to accompany this dish. It was something that had cheese, like cheese puffs, or a cheese pie. The cheese pie would be a smaller version because this dish does not leave you hungry. I use fresh spinach to prepare this recipe, but frozen works just fine. Now regarding the rice, I prefer to use Arborio rice.
There are so many different types of rice grains on the market that you can use for example some of my friends use parboil rice for this recipe. I prefer a softer rice, and I think the combination of spinach and soft rice gives it a unique texture. If you are thinking of using brown rice, I wouldn’t and the reason is even though I love brown rice, it will take much more time to cook. What about the Spinach? Spinach is full of fiber and antioxidants, so let’s not forget the iron in spinach. Yes, I do know that eating Spinach may not be enjoyable for children and adults. But I believe if you try this recipe they might love it.

The Greek name for this dish is Spanakorizo (spinach rice) and I can honestly say that this recipe is a staple in the Greek culture and eaten all year round. Don’t forget feta cheese it goes deliciously well together.

Greek Spinach and Rice recipe

Fresh Spinach and rice cooked with fresh herbs make this a delicious all-year-round dish.

Ingredients

  • 500 grams spinach fresh, rinsed
  • 2 leeks chopped
  • 1 small onion yellow chopped
  • 3 tbsp dill
  • ¼ cup olive oil
  • cup arborio rice
  • 2 fresh spring onions chopped
  • 1 lemon juice
  • pepper
  • salt
  • 1⅓ tbsp tomato paste
  • cup water

Instructions

  • Wlt the spinach with leeks, onions, and olive oil.
  • Add in the dill, salt, pepper, tomato paste and water. Bring to a boil and add the rice, and last the fresh spring onions.
  • Cook for about 25 minutes or until rice is soft.
  • Drizzle the lemon juice over the Spanakorizo. Served hot or cold this dish still tastes amazing.
