Greek Spinach and Rice recipe

Fresh Spinach and rice cooked with fresh herbs make this a delicious all-year-round dish.

Ingredients
  

  • 500 grams spinach fresh, rinsed
  • 2 leeks chopped
  • 1 small onion yellow chopped
  • 3 tbsp dill
  • ΒΌ cup olive oil
  • β…“ cup arborio rice
  • 2 fresh spring onions chopped
  • 1 lemon juice
  • pepper
  • salt
  • 1β…“ tbsp tomato paste
  • β…” cup water

Instructions
 

  • Wlt the spinach with leeks, onions, and olive oil.
  • Add in the dill, salt, pepper, tomato paste and water. Bring to a boil and add the rice, and last the fresh spring onions.
  • Cook for about 25 minutes or until rice is soft.
  • Drizzle the lemon juice over the Spanakorizo. Served hot or cold this dish still tastes amazing.
