Greek Chicken Orzo Recipe
Ingredients
- 2 ½ cups Orzo
- 5 chicken thighs
- 1 onion chopped
- 2 garlic cloves minced
- 2 tbsp tomato paste
- ½ tbsp cinnamon powder
- 2 bay leaves
- 1 ½ ltr vegetable stock
- ½ cup olive oil
- 2 tbsp smoked paprika
- salt
- 4 allspice pepper
- kefalotyri or Parmesan cheese
Instructions
- Preheat oven to 180℃
- In a large pot, add water and boil the chicken for 10 minutes. Remove and set aside.
- In the same pot, add ½ cup olive oil, 1 onion, and 2 garlic cloves. Sauté until they caramelize. Transfer the mix to the baking pan.
- Then add the 2 tbsp tomato paste, and sauté for a few minutes. Add the 1 ½ ltr vegetable stock, 4 allspice pepper, 2 bay leaves, 2 tbsp smoked paprika, ½ tbsp cinnamon powder, and 2 ½ cups Orzo into the baking pan.
- Place the pan into the oven. Cook the orzo until half of the liquid is absorbed. Then place the 5 chicken thighs cook until the orzo and chicken are tender.
- Garnish each serving with your favorite cheese.
