Hello everyone,
The other day, while talking with my mom on the phone, I was telling her about a Greek Breakfast Hash Browns recipe I’ve been making for our Sunday breakfasts and brunches. And she surprised me with a wonderful story. When I finished describing the recipe, she told me that her grandmother used to make something very similar! What I thought was a delicious combination of potatoes, feta, and eggs turned out to be a recipe with family roots and a connection to a generation of home cooking. Who knew!!
Simple potato-based breakfasts have long been part of Greek village cooking, where families relied on fresh, affordable ingredients from their gardens and local farms. Potatoes, eggs, and cheese were staples and still are in many households, making meals that could feed the whole family.
What makes these hash browns uniquely Greek is the addition of feta cheese. Feta adds a salty, creamy texture that pairs wonderfully with the crispy potatoes. As the cheese softens from the heat, it creates little pockets of flavour throughout the dish, making each bite irresistible. This hashbrown recipe is ideal for busy mornings when you want something homemade without spending hours in the kitchen. You can cook the eggs directly on top of the hash browns; this allows the yolks to remain slightly runny for extra flavour.
One of my favourite things about this recipe is its versatility. Serve it with sliced tomatoes, cucumbers, and/or olives. Fresh herbs such as dill, parsley, or oregano also make excellent additions and provide extra freshness. I like to use different herbs each time, so I went with oregano this time. If you’re preparing breakfast for guests, grate the potatoes in advance and keep them chilled in cold water until ready to cook.
If you want extra flavor, try adding finely chopped spring onions, diced red peppers, or a pinch of paprika. These ingredients will definitely elevate the dish. If you enjoy a bit of heat, a sprinkle of chilli flakes works beautifully with the feta. (I did) 🙂
If you are looking for a delicious Greek Breakfast idea, try this Greek feta hash browns recipe; it’s sure to become a favourite.
Wishing everyone a wonderful morning/afternoon/evening!! 🙂

Greek Breakfast Hash Browns
Equipment
- 1 frying pan large
- 1 spatula
- 1 potato grater
- 1 kitchen towel clean
Ingredients
- 3 potatoes large and grated
- ¾ cup feta cheese crumbled
- 2 eggs large
- 4 tbsp olive oil
- 1 ½ tsp fresh or dry oregano
- pepper
- ½ tsp red pepper flakes
Instructions
- After grating the potatoes, place them in a clean kitchen towel and squeeze to remove all moisture. This is the secret to making them really crispy. Heat the 4 tbsp olive oil in a non-stick skillet over medium-high heat.
- Spread the grated 3 potatoes across the entire surface of the pan, pressing down lightly with a spatula while creating a thin layer. Flip over so that the other side is also crispy and golden brown
- Sprinkle the crumbled ¾ cup feta cheese and oregano over the entire surface of the potato.
- As the potato cooks, the feta will melt, and around the edges will start to form a crispy, salty crust.
- Using a spoon, make two small holes in the potato and feta mixture. Crack the 2 eggs directly into the holes. Season with pepper.
- Lower the heat, cover the pan with a lid, and leave it until the egg whites set but the yolks remain runny. Remove from the heat. Garnish with 1 ½ tsp fresh or dry oregano and a pinch of ½ tsp red pepper flakes (boukovo) for a spicy touch
- Serve immediately right out of the pan with toasted crusty country bread!
KALI SAS OREXI!! 🙂
