Hello everyone,

Which team are you on the Breakfast or non-Breakfast team?  I am on the Breakfast team all the way. Have you tried the Fried Egg on Toast recipe?  It’s a simple but oh-so-tasty breakfast treat that only takes a few minutes.  Now, when I say fry I don’t mean use a bunch of oil, lard, butter, or whatever you might be using.  Just a few drops of olive oil will do the trick to prepare this delicious fried egg-on-toast breakfast.  When I prepare eggs I use vegetable oil, but for this specific recipe, I use olive oil.

Fresh fruit and organic eggs are some of my favorite morning adds to my breakfast. Bananas are not in my fruit bowl, I wouldn’t say I like eating bananas call me a picky eater. :). When I fry eggs, for example, three eggs I use a few drops of oil that would be about a tbsp rather than adding butter, or lard.  I mainly use organic eggs in any cooking that I do and also for this recipe.  I  used organic eggs which I have left out at room temperature. This time I forgot to take them out earlier the other day.

I enjoy an egg every so often, but here’s the problem, I don’t eat egg yolk only the white part of the egg.  It may sound odd to some but it just doesn’t agree with me, so when I prepare this Fried Egg on Toast recipe it is usually for my husband or a guest that is staying over.  Meanwhile, I prepared a tomato spread to add to the bread before placing the egg.  I used sundried tomatoes, olive oil, a bit of garlic, and feta cheese.  I tossed all the ingredients except the olive oil into the blender on high speed for a few minutes.  The spread is optional you can also spread fresh avocado and or cream cheese, or nothing at all.

This is a delicious idea for any time of the day, and the best part is that you can choose any other ingredients you love to eat in the morning.  I still find it hard to believe that some people can go with just a cup of coffee.

Ingredients
  

  • 2 eggs organic (optional)
  • 2 pieces of bread rustic (optional)
  • 2 pinches of smoked paprika
  • olive oil
  • dill (optional)
  • 3 pieces of sundried tomatoes in oil
  • ¼ cup feta cheese
  • 1 garlic clove
  • olive oil

Instructions
 

  • Toast bread until golden brown and crispy around the edges. Spread a layer of the tomato and feta mix.
  • Place a pan over medium heat and add the olive oil. Wait until the oil starts to sizzle and then crack the eggs.
  • Bring down the heat to low, take a spoon, and sprinkle over the eggs a few drops of the olive oil that is in the pan.
  • Once the egg reaches the stage of a runny yolk, cooked egg white transfer the eggs to each slice of bread. Sprinkle smoked paprika and dill. Serve hot.

  2. I do this but with avocado like you suggested. Mash it all up with some garlic and onion. Never thought to use the sun dried tomatoes but am definitely going to try this. I am team breakfast too but rarely eat before noon. When I do I eat “breakfast” meals. Thanks for another delicious idea Sophie 🙂
