Hey there,
Now, this is my kind of cake. It’s simple, fragrant, and made with all those lovely orange flavors that instantly brighten your day. This Fruit Citrus Loaf Cake is the perfect balance between light sweet, and tangy.
I am trying to recall when I first tried orange cake for the first time. hmmmm Can’t remember for the life of me; it must have been many moons ago. One of my favorite parts of baking is the aroma that lingers in the air around you. It’s one of those follow your nose kinda things to do. Heheheh, the smell of oranges, a hint of vanilla, ohh so good!. “Yes… This is why I now love baking, and well, there is one more reason: I finally learned how to use the ridiculous kitchen scale I bought.
I mean, seriously, why in the world did I decide to buy a digital scale that wasn’t easy to learn at all! I’m usually quite quick picking up on things, but thisssss no wayyyy!!! You guys can laugh because it is funny! I should have bought one of the Vintage Butcher scales that I was eyeing. But noooo, I had to go digital again. I’ve had digital scales before, never had an issue, this is a first pffff.
Ok, so what I really enjoy about this cake is its versatility. You can enjoy it warm, fresh out of the oven, or the next day with your morning coffee. It’s soft, moist, and has that delicate citrus kick that makes it perfect for any time of day. Either sprinkle icing sugar to coat orrrr you can do maple syrup. Ahhhhh, I poured a bit of maple syrup over mine and it was delicious. I always end up with a little icing sugar all over the counter, the floor, my dogs, and even my hair, heheh, don’t ask, but the scent makes it completely worth it.
You can also freeze this cake even though, let’s face it, it never really lasts that long. So, whether it’s for a quiet Sunday bake, an afternoon pick-me-up, or when you just need a little burst of citrus in your day, this Fruit Citrus Loaf Cake is here for you. Fall Citrus Loaf Cake
Equipment
- 1 stand mixer or hand mixer
- 1 spatula
- 1 loaf cake pan
- 1 sheet of parchment paper
Ingredients
- 3 ¼ cups self-rising flour
- 3 eggs large/ room temperature and whisked
- 250 grams butter vegan/ room temperature
- 1 ½ cups brown sugar
- 150 ml orange juice
- tbsp orange zest
- 1 tsp vanilla extract
- icing powder optional
- maple syrup optional
- parchment paper
Instructions
- Add the butter and the sugar to the bowl and whip until light and fluffy.
- Preheat oven to 180℃
- Add the orange juice and orange zest and whip for 3 minutes.
- Add the self-rising flour one tablespoon at a time, along with the vanilla extract.
- Slowly add in the slightly whisked eggs.
- Line the pan with a sheet of parchment paper.
- Transfer the batter to the baking pan.
- Bake for about 40 minutes until golden brown.
- Once the cake is ready, set it aside to cool.
- Spring with icing powder or a splash of maple syrup.
